Crock Pot Santa Fe Chicken Soup

12 oz. chicken breast
15 oz can of diced tomatoes with green chilies
15 oz can black beans
12 oz frozen corn
1/2 chopped onion
1 tbsp of minced garlic
3 c. chicken broth
1 tsp cumin
1 tsp cayenne pepper

Add all ingredients to the crock pot, and cook for 8 hours on low. 10 minutes prior to serving, shred chicken and return to soup.

Garnish with
3 chopped green onions
1/2 bunch of chopped cilantro

Cheddar Cheese

Bacon, Broccoli and Cheddar Quiche

1 – 9 in. pie crust
2 tsp olive oil
4 – 6 slices of bacon, chopped
1/2 c. chopped onion
1 1/4 c. part-skim ricotta cheese
1 c. cheddar cheese
2 eggs
1 tbsp Dijon mustard
1 tsp oregano or Italian blend
1/2 tsp salt
1/2 tsp pepper
5 c. fresh chopped broccoli
1 tbsp Parmesan cheese

Preheat to 375 degrees – bake for 40 mins. Let stand for 10 mins before slicing.

In skillet, cook bacon, add oil and onion to saute, transfer to large mixing bowl, add ricotta, cheddar, egg, mustard, oregano, salt and pepper. Mix well and fold in broccoli. Add mix to pie crust, and sprinkle Parmesan cheese.
