[Number] Ways to Include Cottage Cheese in Your Diet

Cottage cheese is low in fat and calories, but high in protein.  In a leading brand, a half-cup serving of 1 percent low fat cottage cheese has 82 calories and 14 grams of protein. While cottage cheese can be eaten plain, with fruit or as a salad topping, you can also cook with it, incorporating it into a variety of meals and recipes. Adding cottage cheese to meals does not have to be boring. The sky is the limit here-use your imagination. Cottage cheese can be used in dips, desserts, casseroles, pancakes, breads and a variety of other recipes.

1. Dips

Cottage cheese can be used as a dip for vegetables, fruits, meats and crackers. It is simple to make a variety of great tasting dips by pairing cottage cheese with a few other ingredients. When trying to make a dip with a creamy consistency, use a food processor or blender to mush the cottage cheese curds, allowing them to become creamy.

2. Hot Asiago Cheese Dip

  • 1 cup low fat or fat free cottage cheese
  • 1/3 cup low fat or fat free cream cheese
  • 2 tsp. Dijon mustard
  • 1/4 cup Asiago cheese, grated
  • 2 green onions, chopped
  • 1 jalapeno pepper, minced without seeds

In a blender or food processor, combine cottage cheese and cream cheese, blending into a creamy consistency. Add mustard, Asiago cheese, green onions and jalapeno peppers. Blend well. Pour the mixture into a small baking dish. Bake at 350 degrees until heated throughout.

3. Desserts

For the majority of weight-conscious individuals, dessert happens to be a rare treat or a missed treat of the past. By using sugar-free and fat free or reduced fat ingredients, indulging into a treat does not have to be so daunting. Incorporate fat free or reduced fat cottage cheese into cheesecakes, jello salads, parfaits and a variety of breads.

4. No-Bake Lemon Cheesecake

  • Crushed graham crackers
  • 2/3 cup boiling water
  • 1 package sugar free lemon flavored gelatin
  • 1 cup reduced fat cottage cheese
  • 8 ounces fat free cream cheese
  • 2 cups fat free whipped topping

Spray the bottom and sides of a pie plate or springform pan. Place half of the crushed graham cracker crumbs into the bottom of the pan. In a bowl, stir boiling water into gelatin, dissolving completely. Pour gelatin into a blender and add cottage cheese and cream cheese. Blend the mixture well, until smooth. It is likely that you will need to scrape the sides of the blender. Pour into a large bowl and stir in the whipped topping. Pour the mixture into the prepared pan and smooth the top. Add extra graham cracker crumbs to the outer edges. Refrigerate for 4 hours, allowing the gelatin to set.
