If this sounds like you, consider the recipe below. You will be amazed at the results!
Why Make Veggie Patties?
Vegetables are much lower in calories than meats, and therefore can be great choices for you if you are concerned about your current weight. Secondly, unlikes beef, pork, chicken, and other types of meat, which contain the saturated fats found to be detrimental in the development of cardiovascular disease stroke, and some types of cancer, vegetables are practically fat free. In fact, some research has linked the high fiber content found in vegetables to reductions in these conditions.
Choose High Quality Vegetables
To make veggie patties, you must first purchase some high quality vegetables. Start with the base of your burgers. These vegetables must be relatively hardy, and able to stand up not only to the heat of a grill, but should also be able to bind relatively well to other vegetables. Typically, eggplant, squash, potatoes and even zucchini make a great base for veggie burgers. Next, add the accessory vegetables. These can be things like tomatoes, peppers, carrots, etc. Go wild! Choose things that you know that your family has enjoyed in the past.
Prepare the Patties
Once you get home from the market with your vegetables, you can go about actually preparing the vegetable patties. Start by using a sharp vegetable peeler to remove the rind from your “base” vegetables. Cut this vegetable up into large hunks, and place in a food processor. Mix until thoroughly combined. Now, use a sharp knife to cut up the rest of your vegetables. Try to cut them into as small of pieces as possible, without placing them in a food processor. You want the texture and flavor of these vegetables to stand out.
Put these chopped vegetables into a large bowl, and add the “base” vegetable. Add one whole egg, and about 1/4 of a sleeve of plain saltine crackers. Use your hands to combine all of these ingredients thoroughly.
Grill the Patties
Finally, it is time to cook the veggie patties. Start by raising the temperature of your grill to medium high heat. For the vegetable mixture into patties, and place over the heat. Grill for at least 10 minutes before flipping the patties to the other side. Grill for another 10 minutes to achieve optimal results.
