How to Make Lima Beans a Delicious and Healthy Snack

Also known as butter beans, lima beans are best found during the seasons of summer and fall. You can also buy them in canned form the rest of the year. Lima beans contain plenty of fiber that can help regulate your blood sugar levels and cholesterol. Lima beans are also a significant source of protein, without the extra fat. These health benefits are only a couple of reasons why lima beans can make a healthy and delicious snack. Here are some recipes that you can try.

Cheese Limas

Cheese limas are a quick and easy recipe that you can make with a few simple ingredients. Start by getting a can or package of frozen lima beans. Following the instructions on the package, cook the lima beans. Once the beans are almost done, lower the heat and add butter, light cream and some grated cheese. Cover the pan and let the steam melt the cheese. Add some salt and pepper to taste before serving.

Honey-Glazed Lima Beans

Honey-glazed lima beans make another snack that’s both nutritious and tasty. Start by washing the lima beans and soaking them in water. After two hours, drain the beans. Put the beans in a pan, add water and bring to a boil. Switch to medium heat and cover the pan. Simmer for another two hours before draining. In a separate pan, combine chopped onions and shortening to make a saute. Once the onions are tender, add the lima beans, some salt and honey. Pre-heat your oven to about 350 degrees F. Place the lima beans and saute in a casserole and bake for about an hour. The beans are ready once they’re tender and glazed.

Lima Bean Balls

If you want a snack that you can customize according to your taste, lima bean balls would be a good recipe to try. For this recipe, you will need to boil fresh lima beans until they are tender. This takes about 20 minutes. If your beans are mature and dry in texture, they may have to cook longer. Drain the beans and mash them with a vegetable masher or a fork. Sprinkle with salt and pepper for some light seasoning. Mix in one beaten egg as well.

Lima Bean Spread

Lima bean spread is not just nutritious and easy to make, but it also has low fat content. Puree frozen or fresh lima beans in a food processor or blender. Transfer the puree into a bowl and add minced garlic, lemon juice, cilantro leaves, minced red onion, ground cumin, minced parsley, black pepper and cayenne pepper. Blend thoroughly and chill for several hours before serving.
