Healthy Snacking with Goji Berries

An evergreen shrub is where the small red Goji berries can be found, usually in subtropical areas of the globe. More specifically, Goji berries are commonly found in Tibet, Mongolia and the Himalayas. Most of the time these berries are picked when they are already dried up by the sun.

Goji berries are considered a super food because of their high nutrient content and they've been used by herbalists for more than 6,000 years in countries like China, Tibet and India. These berries are believed to protect the liver, improve fertility and to promote longevity. Furthermore, they provide an excellent source of antioxidants, and they are the only known fruit that offers a complete protein. There are numerous ways to incorporate Goji berries into daily snacks, consider some of the following:

Goji Trail Mix

This is an easy way to throw together a snack that you can grab when you’re on the go or just busy at home. Just mix together a cup of peanuts, a quarter cup of cacao nibs, a half cup of Goji berries, a quarter cup of coconut flakes and a half cup of raisins. This mix should be sealed and can be kept fresh for up to a week. If you don’t have time to make your own trail mix, consider purchasing a pre-made mix and adding Goji berries yourself.

Goji Smoothies or Shakes

These berries can easily be incorporated into your favorite smoothies, and they can be added to ice cream and mixed in a blender to create a tasty treat. Some great ways to play on the flavors of the berries is to blend them with mild tasting fruits such as bananas, pears and white grapes. You can also use yogurt, ice and a natural sweetener such as agave nectar and honey to create a berry icee on hot days.

Goji Muffins

If you like muffins as a snack, these will really help fill you up and keep you satisfied until meal time thanks to all the protein found in the berries. You can use whatever recipe you like for muffins, but instead of using refined flour use whole wheat and replace sugar with applesauce and agave nectar or honey. Make sure to include enough Goji berries so that each muffin contains a small handful.

Goji Salad

This spin on an old favorite is a fruit salad that’s hard to resist. Use your favorite fruits and dice them into pieces that reflect the size of the Goji berries. Then toss them in a bowl with coconut flakes and then place them in a small pan with one tablespoon of honey to coat. Simply sauté the fruit until it’s just warm and then serve in a cantaloupe half or in a bowl. This makes a great dessert any time, day or night. And since the sugar in the food is natural, it is easier metabolized by the body.
