YOU: On a Diet - Superbowl ideas?
Hey gals, I'm trying to plan for Sunday - just a small get together, and wondered if anyone would share some of the YOU: compliant appetizers and/or entrees you're planning on having.

Hi, I don't have everything planned out but I am going to make this appetizer from Cooking Light: Bruschetta Gorgonzola and Apples http://food.cookinglight.com/cooking/recipefinder.dyn?action=displayRecipe&recipe_id=48 6923
My local grocery store carries whole wheat baguettes in the bakery. I plan on having a lot of cut up veggies/fruits/nuts so I am not tempted by other things. My MIL is making bbq pulled pork for dinner. I know I'll have to be careful.

I love Cooking Light - they have the greatest recipes, which can usually be easily modified to fit into just about any plan. Hmm, I never looked at my January issue - I'll have to do that tonight!
Whole wheat baguettes - I'll definitely have to check around for those! I would love to make something like that!
Yes, BBQ sauce is a challenge. I've decided that I'll need to start making my own so that I can control what is in it.

Im not into the Superbowl but I have an appetizer that I make on occasion and it just happens to fit Dr Ozs plan...
1 cup of crumbled light feta
8 kalamata olives (pitted and chopped)
as many garlic cloves crushed as you like ( I use about 3)
1 tbsp olive oil
Mix together and store in fridge
Serve on Wasa crackers or triscuits
very yummY!

How about some chili made ahead of time and put in the crock pot:
My recipe:
1- 1 1/2 lb. bison sirloin roast (I slow cook it in the crook pot the day before and shred the meat)( You can use a beef roast but it has more fat and less protein)
1 cup diced onions (frozen for convenience)
1 1/2 tbsp. minced garlic
1 large can whole tomatoes (I use organic)
1 large can dark red kidney beans (Organic)
1 6oz can tomato paste (organic)
1/4 cup gr. pepper
1 tsp. beef boullion paste
2 tsp red chili pepper
1/2 tbsp. cumin
1/2 tbsp oregano
1/2 cup red wine
1/2 can beer
Simmer in crock pot all day
Serve with triscuits

There were 2 delicious recipes on the Hungry girl website today, one was for skinny potato skins and one was with portobella mushrooms....they listed calories, nutrition and points content. (i'm going to make the potato skins this weekend)

I get email tips from them on a regular basis...they do very accurate reviews on both grocery and restaurant foods nutrition and critique.

Thanks for all the tips - I had a pretty OP evening - I made the HG potato skins, my own Emeril's chicken tenders, which I baked instead of frying, and a pretty healthy 7-layer bean dip - with FF and LF dairy products substituted. We had some multigrain tortilla chips to go with, but were so full from the chicken and skins, that we didn't eat much of the dip.
How did you gals do?

I think this year I'd like to find my own recipe for a spinach-artichoke dip - and serve with baby carrots or whole wheat pita. Any one got any recipes? I'm going to search both the Hungry Girl and Eating Well sites to see what I can find there.
I think I'll make some of my own hummus again - it's so cheap and easy to do now that I have a nice food processor.
The chicken strips I made last year were great, so I'll be doing those again. DH want's "bean dip" again, but I think I"ll do something with whole canned beans instead of using canned refried beans.
What is anyone else doing?
