I just made this salad today and I couldn't believe how good it was. I had it with low carb pita pockets, what a great lunch. ENJOY!
Total points for recipe: 16 (4 servings of 4 pts each, and they're a good size)
1 bundle bean thread noodles (saifun 1.7 oz)
1 pckg coleslaw mix (16 oz)
3 oz shredded carrot
4 thinly sliced green onions
½ large red pepper thinly sliced
7 oz boiled chicken breast shredded
3 tbsp Lite seasoned rice vinegar
1 ½ tbsp Lite soy sauce
1 tbsp water
1 tbsp Red Hot sauce (optional)
2 tbsp chunky natural peanut butter (1.1 oz)
Soak noodles in boiling water for 20 minutes.
Mix all the vegetables and chicken in large container. Drain noodles and cut them with kitchen scissors, add them to the vegetables.
In a small dish mix all the dressing ingredients, warm up in the microwave for 30 seconds. Mix with wire whisk until well combined. Pour over vegetable mix, toss to cover evenly.
