Fun NCAA Party Recipes
I thought this might be a good place to post some recipes that will be good and WW-Friendly for those of us who plan on going/holding a NCAA Championship Game
I have my standard veggies and Bell Pepper Dip, fruit tray, and I'm going to try an Angel Food Cupcake recipe I saw here on the board.
Any other suggestions?
Bell Pepper Dip
1/2 package low-fat (cut a 8 oz. package in half)
1/2 package cream cheese (cut a 8 oz. package in half)
1/2 tbsp splenda
2 tbsp milk (skim/lf)
1 small (or 1/2 large) Bell Pepper, finely chopped
1/2 finely chopped jalapeno (optional if you like some spice)
garlic powder to taste
Let the cream cheese sit out to room temperature so that it is easy to stir.
Stir the splenda in the milk. Heat the milk in the microwave to help the Splenda absorb (but don't boil it)
Stir the milk mixture into the cream cheese. Add the bell pepper, jalapeno, and garlic powder.
Serve with crackers or Veggies
