Does any one have a good banana bread recipe? :?:

I have not tried this yet but this is from a WW cookbook (2006 Weight Watchers New Complete Cookbook) I just got from the library-

1 3/4 cups all purpose flour
3 tbsp packed light brown sugar
2 1/4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup chopped walnuts
8 dried dates, chopped
6 dried apricot halves, chopped
1 large egg
1 ripe banana, mashed
1/4 cup FF milk

1. Preheat oven to 350 degrees, spray 8 by 4 pan (9 by 5 would work as well) with nonstick spray.

2. In a medium bowl, combine flour, brown sugar, baking powder, salt and cinnamon; stir in walnuts, dates and apricots. In a small bowl, beat the egg; add banana and milk. Pour over flour mixture; stir until just blended (do not overmix).

3. Transfer to pan and bake about 1 hour or until toothpick in the center comes out clean. Cool completely on rack.


3 PP+/2 points flex/momentum per 1/12 loaf. Nutritional info for per serving if you use all ingredients as mentioned above- 133 calories, 2 grams of fat, 0 saturated and trans fat, 18mg cholesterol, 178 mg sodium, 26 grams carbs, 2 grams of fiber, 3 grams protein and 35 mg calcium.

Now, if you're a little leery about the dates and apricot halves, omit it for something else or just add a bit more banana and/or raisins. Hope it turns out great! I will be making this in the following week WITHOUT the dates and apricot halves.

I finally made this and it turned out yummy and MOIST! Took about 50 minutes for me to complete in a 9 by 5 loaf pan. Only thing I did different from recipe was use almond milk (ran out of regular milk) and swapped the apricots for 1/4 cup golden raisins.

I finally have some banana's that are ripe enough, so I am going to try it this weekend. i love yummy moist banana bread.

I'm definitely going to try this! Banana bread is one of my favorite but I'll most likely leave out the apricots and dates.
