Thumbs up Added Zip to Soup without adding points!

Hi everyone -

Last night I made a HUGE pot of the WW Skinny Soup.

In the past, my family wouldn't eat this because they said it was "too bland". So last night I had one of those "AH HA" moments.

When I went to the pantry to get the tomato paste, I saw a couple cans of RoTel tomatoes w/green chilies! I put back the tomato paste. After cooking the soup with all the veggies for about 30 minutes (I cut my veggies in chunks like a stew but a little smaller) I added the two cans of RoTel.

Let me tell you......It was wonderful!!!! Just spicy enough to add "zing" without needing TUMS . Each of my boys had 3 big bowls and my husband and I each had two. It was great. I will make it this way from now on. Best part? Didn't add any points to the recipe!!!

My recipe contains: carrots, celery, spinach, kale, yellow squash, zucchini squash, tomatoes, green onion and cabbage in fat free beef broth.

*Just a note: When I said HUGE batch, I wasn't kidding. Even after all the soup the four of us had last night, I still was able to freeze EIGHT 32oz containers of the soup!!!

Yum, thanks for the tip! I can get my family to eat about anything if it's spicy, so I'll try that.

I'm going to make an asian version tonight with napa cabbage, zucchini, spinach, onions, and a bag of frozen stir fry vegetables. I'm not sure how to give it some extra flavor - I'll add some light soy sauce, and I suppose some ginger. Does anybody have suggestions? I love soy sauce, but don't want to overload it with sodium.

scallions. Maybe a bit of sesame oil? A little goes a long way....
