This is a thread where we can post our on plan daily menus. It is a place where we can hold ourselves accountable to our fellow board members and maybe find inspiration when we're lacking.
breakfast: 1 slice whole wheat toast, 1 tsp. peanut butter, 1 egg (total points:4)
lunch: beans and greens (1.5 cups steamed kale, 7 oz. garbanzo beans, 1/2 onion, 2 cloves garlic, 1 tsp. olive oil), 1 cup steamed zucchini, 1/2 apple (6 points)
snack: 1/2 apple, celery with 1 laughing cow wedge
dinner: family is having chicken and white bean enchiladas, I'm going to bake some of the enchilada filling and have it over shredded cabbage.
