Default Honey questions

Hi
I just have a quick question for you girls about honey. I saw what bronzeager mentioned about it sometimes not being real. I get most of my fruits and veggies through bountiful baskets co-op. This week they have raw honey 12lb in a glass jar for $34. It from UT and ID which are both pretty close to NV where I live so I like that. Anyways my question is is this the best honey to get and how big is 12lbs? What could I do with all that honey and how long does it last? I'm thinking I could use it in place of most sugar in recipes and it lasts a long time, just 12lbs seems like a lot. Any help is appreciated! Thanks

Heather, one gallon of honey weighs 12 pounds. That is a lot of honey! It can crystallize after a while. That doesn't spoil it, but it can make it more difficult to use. Honey is not always a good substitute for sugar, but it works in a lot of recipes.

That sounds like a great price for honey, but it might not be a good deal if it goes to waste. Do you have a few friends or family members you could split it with?

No no one to split it with really. It ended up not being offered at my local co-op but will in the future. I will have to see if in the meantime I can find someone who might want to split it with me and maybe do some more research in the meantime and what the heck I'm gonna do with all of it. You can sub honey for sugar in most baked goods, but it's not an even swap. Honey is sweeter, so you sub 3/4 cup honey for each cup of sugar. You also need to reduce any liquid in the recipe to compensate for the liquid in honey (3T per 3/4 cup of honey.) Oh, and reduce the oven temp 25 degrees. Honey can make stuff burn faster.

I've heard storing honey in the fridge stops crystallization, but I have yet to try it. I use up honey pretty fast. We eat a lot of homemade granola.

I take a teaspoon on raw, unprocessed honey every day for my severe allergies. I also use it to sweeten my hot tea, cereal and also used when I cook.
