I also must say that I was wanting oatmeal but didn't have time to make it. Well one weekend morning I made a batch big enough for my family of 4 but it turned out not everyone wanted it, so instead of throwing it out I stuck the left overs in the fridge. Figured I should try it before deciding it would be awful (although I was sure the texture would be ruined!)
To my surprise it was wonderful, I had it over 3 days and no problems with the texture. Now this was not the loooong cooking steel cut oats it was the 5 minute cooking kind. I always seems to take me close to 20 minutes to get those cooked the way I like so this was so nice. Each day I was able to decorate the oatmeal according to my tastes
