Allison, that sounds soooo good, and I think if I used a mild chile, my DH would eat it! He doesn't "do" spicy foods. And I'm getting spinach in my CSA box today.

Hope - that's the great thing about Cooking Light recipes, they all have NI. I love that magazine, and was in fact over the latest one in bed last night.
