Someone pmed me and was interested after hearing that I mill my own wheat.
Are there any other bakers out there? Whether you mill your own wheat or not? Join us!

I want to start by saying I am NOT an expert on this. I did grow up making bread 1-2 a year with my mom but we used white flour. I always loved it.

Well earlier this year I started posting on a homemaker site where alot of the women cook from scratch. That is where I learned alot myself and got sold on the idea of making my own bread all the time and freshly milling the wheat. Most people here know how "white bread and flour" has most the nutrients and vitamins stripped, then some added back. When you bake your own bread, YOU control the ingredients.

I purchased a Nutrimill electric grain mill in April, got it from this place.

I am very happy with it. At the local health store I can get organic, hard red wheat for like $35.00. I have to special order it. I am pretty sure it is a 50 pound bag. The bread is very delicious!

One small problem, any time I would go to make muffins for the kids, they would be very crumbly. A friend online told me that I needed to get soft wheat/ pastry white wheat.

So I got some of that and it is very good. The general rule of thumb is anything that needs yeast, you should use the red wheat, anything that you use baking soda or baking powder for you can use the pastry wheat. I am not going to lie, although I LOVE the bread and rolls and the muffins, some things just are not the same.

Like making home made pizza, I do use the white wheat but it is NOT going to be the same as pizza from the local pizzeria. It is VERY good though. And a heck of alot healthier.

I have tried my hand at tortillas and am still looking for a better recipe though. The tortillas taste very good and are very filling but they do start to break when you fold them over. I have seen some websites suggest dough enhancer, but I have never tried that for myself and am not sure either way of whether that would be a good thing or bad.

The bread. I have two recipes I like. I will say this, I LOVE the bread when it is hot out of the oven! I could probably eat half a loaf and the kids love it too. But I do not care for it when it is cold and in the fridge. My dh does not mind though and he will eat if every day. For me that is fine cause I will bake once a week and have some bread and then I have bean stuff for lunches usually.

I will tell you the difference between your own whole wheat and store is different. It packs a powerful punch. Like when I make "Kenny Roger's Corn Muffins." Wham! Same with the tortillas, the particular recipe I have done, when I first seen how tiny they were I was like, I could eat 10 of these! I had two with beans and cheese and rice on the side and was stuffed.

The particular recipe I have is pretty high in cals due to the extra virgin olive oil, like I said I would like to tweak it some day.

These were the best muffins I have ever made! A great recipe and they did not fall apart, they were moist and delicious and everything a muffin should be ! I used a recipe from the make a mix cookbook.

I recommend using a fork to seal the edges, she likes using her thumb.

Wow, great pictures!

I used to bake bread, but I find I don't have time these days. Your tortillas look great - I've never tried to make those.

Thanx for the compliments. It really is so much healthier for us than store bought. Sometimes I make up enough dry muffin mix for 4 batches and then freeze and use as needed. :)

I love homemade bread but I never trust myself with baking bread, cakes, pies, etc because I know my 'portions' will be bigger than suggested and my calories will be all out.

I have a Vita-Mix, but not the dry blade for making flour. You are inspiring me to get it!
I have access to whole grain organic flours, but also I have been reading some things (sounds kind of woo-woo, but who knows?) about how the more of your own energy and love you put into your food preparation, and the more basic you get with it, the less you rely on having it manufactured for you, the more it is nourishing in ways we cannot measure scientifically.
As a scientist I find this concept....fascinating... (where are my pointy ears?)

I love to make bread, but have never tried milling my own flour. What a great idea! I'll have to try that. It fits in my plan that I can eat whatever I want as long as I make it myself :-)

Hi. I have been milling my wheat and making bread, pancakes ect.. since 2001. I really enjoy it but I can eat too much of the bread when I let myself. Milling and baking bread is a very addicting hobby. My IRL friends though I was crazy when I started but then I converted a few of them.

Nelie: I will get you a recipe tomorrow. I am doing alot of baking/cooking from scratch now that the weather is cooler again.

You know what I have a new salsa recipe that is really good. lots of fresh vegies and extra virgin olive oil and red wine vinegar to boot.

I know what you ladies mean about needing to be careful. I LOVE fresh bread hot out of the oven! And I can definately overeat it taste so good. lol Good thing for me is I try to bake once a week. So IU portion some out then. I generally won't be tempted to eat it cold. Course there is always the toaster. ;) For lunch I like chili beans alot.

Momtothree: I love doing it too! I am trying lots of nrew recipes and really enjoying being in the kitchen.

luja: That sounds great! It is alot healthier to know what is going into your food.

What is the link? I believe it. I read something similiar about 6 months ago, they said get someone in the kitchen that loves and cares about the family. It DOES make a difference. Think about it. Go to some fast food joint and they slop a bunch of processed food on your plate and don't care sometimes where it came from or if it fell on the floor even.

When I go and cook. It is an ordeal. There are days where I go in and spend 4-5 hours, cleaning, washing fruit with veggie wash, chopping, prepping, grating, cooking, baking. There is love and care involved. Sometimes I will make up enough for later. Like last weekend I made up 4 lasagnas and froze 3, same with the garlic stix. made up 2 big containers of salad. Cleaned and chopped up a bunch of fruit. But you know what, the next day I threw a pot roast in the crock pot. lol

I make extra muffins and freeze for later. extra dough and freeze for later.

I have been experimenting alot lately with home made whole wheat pizza. As long as you watch your portions and add veggies and chicken, etc. It can be healthy for you. :) We add bell peppers, onions, pineapple and olives, plus chicken.

Here is a recipe for a fruit and veggie wash:

This would be enough mix for 4 batches.

Muffin Mix(For Nelie)

8 cups all purpose flour(I use organic soft white wheat)
3 cups sugar
3 TbS Baking powder
2 tsp salt
2 tsp ground cinnamon
2 tsp ground nutmeg

That would make about 11 cups of muffin mix. I usually make that up and freeze it. If you use flour with preservatives it can sit in your pantry.
Basically mix well in a huge bowl. i use a metal whisk to blend ingredients. Put in a large airtight container. If you are using flour from the shelf at the store this says it can sit for 6-8 months

That mix can make melt n your mouth muffins, which is what I always do, or molasses bran muffin, apple muffins, lemon poppy seed, cranberry cakes w/butter sauce, zuchini, and gran. If anyone wants those recipes let me know.

Okay so take that muffin mix and make variations of

Melt n your mouth muffins.

Preheat oven to 400

Take 2 3/4 MUFFIN MIX (That would = 1/4 of the big Muffin Mix pack)

1 egg
1 cup milk
1/2 cup butter or margarine melted or 1/2 cup oil

Put muffin mix in a med. bowl. Combine egg, milk and butter or oil in a small bowl. Add all at once to muffin mix. Stir until mix is just moistened: batter should be lumpy.(I don't think I leave mine lumpy)

Spray muffin liners with cooking spray. Fill to 3/4 full. Bake 18-20 minutes until golden brown. Makes 10 large muffins.

Variations: cornmeal, butterscotch pecan, dried fruit, peach, blueberry, cranberry nut, banana muffins

Banana Nut Muffins

Mash 1 banana(1/2 cup) and add to liquid ingredients before adding liquid to muffin mix. Sprinkle walnuts as desired. (I usually grind mine up or toss a few in each muffin once they are in the liner otherwise they all sink to the bottom.

One thing I want to add that is with some recipes I use honey instead of sugar, if you do this and the recipe calls for sugar, make sure you google what amount to use instead. I have never substituted in this particular recipe cause it would throw the ingredients all off. Like even if you decided to forego the sugar and just add honey later when you do the muffins, the sugar makes up some of the bulk that is the 2 3/4 cups, KWIM. So you wouldn't want to add 2 3/4 cups, the ratio would be different. If you want you could always cut the recipe into a 1/4, then just know that is enough for 1 batch of muffins and then add honey in.

Oh and by the way you can use applesauce sometimes in place of oil in breads or cakes. Never tried it myself though.

Hey, I just saw this thread and had to jump in! I make my own bread as well. I don't grind the wheat, but I have been thinking about doing that at some point.

In fact, I'm waiting for the oven to heat so I can pop some loaves in right now. I'm trying out a recipe from my Dad's old Rodale Cookbook (circa 1973.) It's the only truly whole wheat recipe I could find that I had everything on hand for. I have to say, I'm amazed at how well the dough did in the rising department. I always thought that all wheat dough didn't rise well. I guess that 1/4c of molasses really helped the yeast power up. Lol.

I make bread for many reasons, mainly for enjoyment and because it's really hard to find good tasting bread that isn't full of strange chemicals. It's hard to resist when it's warm though. I practically have to hover over the loaves so DH doesn't devour them before they cool.

I mis placed it though. This here is the best recipe for whole wheat bread I have tried to date. It is my main recipe now. If you look at the pics I think it rises pretty good.
