LEMON SPONGE DESSERT WITH BLUEBERRY SAUCE

Estimated POINTS® Per Serving | 4
Servings | 8

Ingredients
3/4 cup sugar
1/4 cup reduced-calorie margaring
1/4 cup all-purpose flour
2 large egg yolks
2 egg whites
1/4 fresh lemon juice
1 Tbsp lemon zest
1 cup 2% reduced fat milk
1 1/2 cup unsweetened frozen blueberries
1 Tbsp cornstarch

Instructions
Preheat oven to 350 degrees.

Melt margarine. Separate the eggs and lightly beat egg yolks.
Beat egg whites until stiff but not dry.

Mix together sugar, melted margarine, flour, egg yolks, lemon juice,
lemon zest and milk. Carefully fold in egg whites. Pour into a loaf pan.
Place pan in shallow water bath and bake 40 to 45 minutes or until
light golden brown. Cool on rack to room temperature.

Meanwhile, thaw and heat blueberries in a nonstick pan.
Thicken with cornstarch.

Slice/spoon lemon sponge and spoon 2 tablespoons of bluberry sauce on top.

Special Notes
Lemon sponge is the filling of my favorite pie.
By eliminating the pastry and baking in a loaf pan I can still
enjoy the flavor and the addition of the blueberry sauce makes
this a delicious dessert.

It' a Sat. morning ,and I just got up and came right here to check the boards, and all I have to say is, "You guys are great!!!" I've got this silly grin on my face now, that I can't wipe clean! It's a nice feeling, like I had morning coffee with the gals, even though I just was reading...lol.
Supper last night went well....I'm sure I was waaaaaaay over pts. I limited myself to one piece of bread (except for the few pieces of crust, that my 8 yr old kept throwing my way), I had my salad with ff french and barely used any of it( and gave the hubby my sliced hard boiled egg in return for his tomato), had a little plate of the spagetti and rice, and two glasses of white zin, but I did devour both my chicken breast... at the first one right away and picked at the second during conversation....if that darn waitress would have ever showed her face again, I could have wrapped it up...instead I mindlessly ate it, and hence I'm up 1 lbs this morning....but I'm not sad about it!
Have to say the weekends are almost always my hardest times....as a social drinker, we have another outing tonight...and I find not drinking sometimes seems to offend people, either that or it's just habit when we going out. Might have to set some goals to work on that one, because it eats up the points in a hurry, and I tend to forget to count them after awhile..hehe.
So the plan today is.....going to walk MY mutt....who is also molting (well shedding everywhere), right now. Then I'm going to go and tan, it's been my "me" time, in preparation for the wedding, then when I get home, I'm going rollerblading!!! That's the plan...somewhere in there I have to get some shopping done too today, before the night out. Well better get to it!!

Morning All

Sassy I copied all those recipes into Word so I have them when I need them. Chocolate Frosting I'm sure we can all relate to the mirror image. For so long all we see is the neck up and if makeup and hair look good and we are neat, we think how bad can the rest be. But we all having turning points and must forge ahead. Congratulations on the upcoming wedding. How exciting this time is for you. And a busy one.

Michelle, I know what you mean about the feeling when you read the boards. It is something I am looking forward to each day. As far as dinner went last night, you didn't do the damage that you would have done had you not been on program. That is a big plus.

I have been super focused this week and am not worried about Easter dinner. I will enjoy my family and the great meal I am cooking and eat smaller portions. Then it's super focused again on Monday. Don't think I can get in my walking today. I have too much to start preparing for tomorrow. But I hope to get my daughter-in-law and sister in for a walk later tomorrow evening.

Have a good weekend and holiday. Not sure I can get back here until Monday.

Default Another lurker adding her 2 cents.

Hi All,

I've been struggling for some time. I've done WW before and know that it works and is very adaptable. The only other program I found managable was sugar busters but with out the points outline I eat way too much. I haven't followed WW since 7/2002 but lost about 30 lbs. Of course I am a notorious yo-yo dieter, hence the type II diabetes(and my doc is ok with WW), HPB and high chol. So I dragged out my WW booklet and points finder. It's a little outdated from 2002 but I'm hoping it didn't change too much. I weigh 286 so my point range is 29-34. I'm not joining a local chapter. It's pretty expensive by me. I'd rather put the $ into the groceries I need. I'm also trying to find a local TOPS chapter for weigh ins and support. But 3fc is better than anything I've ever tried. So I am hoping I can squeeze in here. I read back thru the last pages at helpful hints, support and recipes. Sound like a great group. I think I've been focusing too much on what foods are legal on the other programs and end up constantly eating those foods because that is where my mind is. With WW you have the structure of the points and the flexibility with the food that almost anything can be made to work, I hope Through my last couple of months of bouncing from program to program I have picked up a few good habits. I do drink at least 64 oz of water a day. I love frozen and fresh vegies and eat them as the main portion of my meal instead of a side dish. I have also started exercising, slowly, but exercising. Not feeling too great with the health issues and so much extra weight, but I'm trying I still can't help giving in to those goodies. I live with my dh and 3 ds's (26,22,21) and they don't worry about what they put in their mouths. The dh is great as far as my weight goes. But he's not the get involved support type. Willpower is not an issue for him hes and ex marine. And he can't understand why the cookies, cakes and crap he keeps around tempts me. Right now he's got 6 boston cream choc frosted donuts in the fridge, and he'll eat one and there they will sit taunting me. That part sucks. That is my weakness, junk carbs. So I am trying to not think about them and not eat them. I think I need to talk to him though. It's just wrong, isn't it? I guess he shouldn't have to suffer because I have trouble resisting. Oh well, I've rambled enough.

Oh yeah, I went on for so long I forgot my 2 cents. Michelle, I read a great idea on this board. When you order out at a restaraunt, ask for the to-go container upfront. Then you can put the portion you shouldn't eat in it at the start of the meal. Out of site, out of mind. And you'll have a meal for the next day.

Thanks for listening. Can I stick around without actually being a WW member?
or is doing the program enough?

ttyl, (I hope)

Hi Donna, Welcome Aboard! I found this particular thread last week and have enjoyed the talks and support here. I know you will too.

My husband is the same as yours. Can have cake or goodies around and only eat one. Can you believe it. What is wrong with them.

As you probably read my previous posts I have done this time and time again with weight watchers. Reach goal and go back up, but this time I haven't let it go too far. Only 20 lbs and for me that is something.

Don't worry about not exercising at top speed. Only 5 or 10 minutes at first and soon you will feel able to up the time. Any time spent doing it is worth it.

The points finder hasn't changed. So you are good with that.

Come and join in the challenge that will begin April 18th that Chachee is forming. You can read about it on her post from yesterday. Although I am a lifetime member of weight watchers, I am not attending meetings now. I am doing it on my own.

Ok guys, I know I said this morning I probably wouldn't be back until Monday but I lied

Welcome Donna!! ~smiling warmly~ i´ve seen a few of your other post´s on other boards and i for one am happy you decided to post here as well. meetings are kind of tough for me too. i dont know the language well enough to understand what they are saying. but i do get the papers, pamphlets, recipes, and my deutsch to english dictionary and translate word for word. its a time consuming, tedious task but i make it fun. i become..........Sassy the secret agent, decoding specialist! ~laughing~ hey a girls got to do, what a girls got to do ~grinz n winks~ it doesnt feed the "instant gratification" side of me. especially when your pumped up, raring to go, seeing results and craving more and more knowledge........but thats what 3fc and the ladies who frequent these boards do for me. keeps me pumped, keeps me excited, keeps me motivated!

like Michelle, i wake grab my cup of coffee and hit these boards. i have changed my homepage to 3fc. its a wonderful way to start the day. it not only keeps me focused and on track but starts my day off with a smile as well. being 6 hours ahead of Eastern Time Zone, theres always fresh posts for me in the morning. ( i get up at 5-6am which would be 11pm-12am est) the only down time is from my 8 am till noon, when most of you are sleeping. and i find myself eagerly waiting for you all to wake up and talk to me!! ~laughing~

anyways welcome again Donna.......Happy Easter everyone....and i cant wait till you all wake monday and tell me how your holiday went!!

sincerely,
sassy

Talking Thanks for the welcome....

Hi Dotti and Sassy, Thanks for the warm welcome. You can always count on that at 3fc. Sassy you may actually see this message shortly after I post with the time difference. I am usually up late on the weekends and being 2:30 am here, you are up. We usually go to the movies on Sat night and always post to get sleepy. As I sit here wide awake We stop at the dinner. I opted for a BLT instead of the bavarian waffle I used to get. I'm diabetic and the waffle and syrup are a Now I have to set into a higher fiber lower fat selection. One step at a time. Total deprivation gets me in bigger trouble I just end up going too far. So I am trying. It's always easier during the week. I go to sleep earlier. Usually around 11:30 and working all day is easier then being home near the food. Well, I guess I should rap this up. Again for the welcome. ttyl

Hey y'all....again...welcome newbies...glad our little circle keeps growing!!!!
Well it's Easter, and with every family get together comes the big feast....the hubby and 8 yr old requested a pancake breakfast , so I'm not of to an award winning start today...I have to say weekend are really , REALLY hard for me...went to bowling last night and had a 1/2 order of fries, because it was either that or chips or candy to tide me over until supper (my fault I didn't grab something before we went up, I know) Then I limited myself to only two drinks....so that part was good, and I drank water the rest of the time, but for supper I had a grilled chicken sandwich...no mayo...which was a good choice, but shared cheesy bread sticks with the hubby...that did me in!!!

And with today's pancake feast (three 5'inch ones), I'm feeling a little heavy today...didn't even step on the scale....which we all know it weird for me. Also last night when I was getting dressed to go out, I had a case of the wardrobe "blues", where I tried on about 8 outfits, and still felt fat in the one I chose...pretty much it's like I know I've done good and lost, but the mirror image isn't reflecting it....
I know, I know, I'm just bummer girl this holiday morning....just had a case of the blues....what can I say, if I was peppy all the time...you guys wouldn't think I was a real person..hehe!!
Ok....focus, Michelle, focus....here's what's going to happen...I'm going to go down and do a half hour walking video tape or my Richard Simmons, dance your pants off...that always puts me in a good mood....then I'm getting ready to go...and we're driving 45 minutes to Grandma's house, in which in the drive I will read a Fitness or Shape magazine or two....then at Grandma's house I will only take small portions and eat slowly, and quit when I'm full...not when my plate is empty...and after that hopefully I'll get to go for a walk with my MOM, we don't get that much "alone" time together, so it's our usual Easter routine......and all will be good!!!!!! Tomorrow's monday, so that will be back to business as usual. It's them darn weekends I'm starting to dread!! But Monday is good!
Well better get my butt up and go have a dose of "Richard", he's corny I know, but I have to say it's one video tape that has people my size or bigger, and not some lil skinny peppy chick in a thong exercise outfit, who make me feel like crap just looking at her perfect, no sweating body!!! Man really AM bitter today.....better go exercise and get those endorphins going!! hehe!
Later gang,
Michelle

Hello everyone! I figured I would stop in and say hello before heading to my mother-in-laws for Easter. I just love this board! I am also happy to say I weighed in at 155this morning so I am only 12lbs away from my current goal. it is funny how it keeps changing the closer I get. It used to be 150 which I am only 5lbs away from. All well! I think 138 would be my ultimate goal. I am also only 5.5lbs from not being considered overweight by that darn BMI scale! I am only 5'5 so I am at a disadvantage. Plus I did a test once and am 1/8" between large and medium boned. All well at least I have an excuse...hahaha Have a great Easter everyone. i am not worried about overeating or anything because I am such a picky eater and the in-laws cook things differently then my family so I have a hard time finding stuff I will like (ex. they put onions and tomatoes in everything!) I am just hoping I don't fall for the celery in the cranberry kind of salad again. Ugh I hate celery and have forgotten and eaten it like 3 times! You would think I would learn. I am cringing thinking about it! well I better get going! byebye!

Hey, Michelle - don't worry about being a bummer girl today. You made some good choices this weekend. Maybe you can make it a goal on Thursday afternoon to try to plan another good choice for the weekend. Every good choice adds up until you won't dread the weekends so much.

Welcome, Donna (or is it really Talulla?) There is one thing that's changed in the new WW program. Instead of having a points range, you have a flat number of points that you must eat (your minimum) then you have 35 points each week to use however you want - all at once, a few a day - whatever you want. The points are: less than 150 (don't we wish??) 20, 150-174 22, 175-199 24, 200-224 26, 225-249 28, 250-274 30, 275-299 31, 300-324 32, 325-349 33, 350+ 34. The extra points don't carry over from week to week (darn it) but it is kind of cool if you want to use all 35 on one meal on a special occasion. They are also pushing the 8 healthy habits as part of the program (water; 5 fruits/veggies; milk; portions; limit alcohol, fats, sugar; eat whole grains; get enough protein)

Hey, gang - had my official weigh in yesterday and lost 4 pounds!! Too bad that's the first week water weight, but I'll take it!! I won't be posting until next Friday because I'll be out of town on business in - New Orleans!! And staying very close to the Cafe du Monde - home of the beignet. I don't know if I'll even try to resist, but my big goal is to definitely lose weight this week even if I am on the road. Wish me luck!
TTYL, Cris
Starting weight (this time) 186/182/goal 140ish

Morning! Hope everyone had a wonderful Easter. We did. A lot of food but I didn't go nutso like I normally would.

Since I started back on program last Monday I decided to weight myself yesterday morning to compare with my weight-in on today. Well yesterday I was down 2 lbs. This morning I was down 1 1/2 lbs. Which is even better because I only put on 1/2 lb from yesterday. It could have been worse. Today it's back on track.

Cris good job on the 4 lbs. What a city to have to go too and not be able to induldge. I would head straight for a beignet. You have my good thoughts with you for the week.

Sunshine you are so close to goal. How exciting! Don't try to go too far under a goal. That isn't good. All those charts and BMI can make you crazy. If you feel good that is fine. That is why my goal is no longer what the charts say. My doctor agrees my higher goal is perfect for me.

Michelle, pancakes. Mmmmm. I have some of Richard Simmons tapes but don't use them anymore. If I can't walk outside I now have Leslie Sansone's Walk Away The Pounds. I really enjoy them. Looks like that is what I will be using the rest of this week because it is raining and will be for the next few days.

Donna and Sassy loved reading your posts too. I now have a new addiction. THIS BOARD!

See you all later. :

Goodmorning everyone:

I am at work so haven't had a chance to read everyone but I like the idea of copying the recipes to Word. I'm going to try that.

I just wanted to say a huge THANK YOU for the recipe with the FF Cool Whip, FF butterscotch pudding, crushed pineapple and diced apple. I made it for an Easter dinner for some of the guest that I knew were cutting back and it was the most popular dish that was served.

Thanks

Okay...to start out with I have to get this off my chest.....4.5lbs.....4.5 lbs up this morning, is that even possible!!!!! Oh my god, I almost fainted on my scale!! What the heck....I mean I know I had some poor food choices over the weekend, I HATE WEEKENDS, by the way, but come on!!! What the heck!!! And I did almost 80 minutes of cardio yesterday....30 minutes on roller blades in the morning and a 50 minute walk with my mom and aunt in the afternoon. I was 211.2 on Sat. morning, and 215.6 this morning....what the heck?!!!! ahhhhhhh!!!!
So...it's back to task...I'm not going to have any alchohal until the wedding...that's a new goal, even on weekends!!! Also, if I know I'm going out, I'm going to go with a plan! I'm going to work out atLEAST 30 minutes 5 days out of the week, even if it's fifteen minutes here and there. I'm going to cut one pt a day....and get all my water in! I'm going to journal every detail, and focus, focus, focus!!! And I'm going to try not to obsessively weigh myself, in fact. I'm not weighing myself again until next Monday morning!!! Your heard it here! That will be my hardest goal to keep, but I'm going to go in and put the scale in the closet right now!

ok, that said...I'm glad you enjoyed the recipe for caramel apple salad! And that everyone had a good Easter! Other than the weight issue, so did I.

Got this weeks meals planned so Monday-Friday should be a breeze....got a housewarming/homecoming(from Irac) party on Sat, and a bowling tournament on Sunday.....I can't remember what it's like to do nothing on the weekend!! And the weekend after that I have an all day quilting bus trip to do on, which will a food challenge too, plus that day is my bday..... but I'll deal with that when it comes, lots of time before then.
Well better go and get the morning chores done, so I can get my 30 minutes in.
Later,
Michelle

This is the second time I've tried to respond - so I hope you don't get to read similar stuff twice.

I just wanted to say that one of the instructors at Curves told me that you shouldn't weigh yourself after doing exercise, because you will weigh more. she told me the reason but I can't remember - something about if your muscles are sore (inflamed) they hold onto fluid and you think you've gained when you haven't. With all that exercise I can't believe those scales.

I also think that while it is really hard, we should try to only get weighed once a week, same time, same clothes (or lack thereof) to get a true feeling of how we are doing.

Don't get discouraged !

Hi Ladies,

I'm running late, but wanted to jump on and post quickly.

Michelle, please don't stress. That 4.5 will come off quickly. Take a new look at what you journaled last week and see if it was honest?? I know sometimes I fudge the numbers a bit, you know, 1/2 cup instead of 1. It's a coping mechanism. Now, as far as weighing in, I am always down a pound after my cardio workout. Don't ask me how, but it happens that way. I am not sure what type of workouts you are doing, but remember weight training ALWAYS ADDS weight for the first month or so.

Donna, welcome and I'll try to get to your posts and everyone elses tomorrow. My father is still here and we are busy with finishing up basement stuff and getting him on the plane tonight.

I will most likely show a gain this week, as it's pms time for me and chocolate is my best friend. I've not journaled 3 days so far because it's been out of control. I've reeled it back in and started fresh this morning. I hope I can undo some bad before Wednesday night! Egads!!

One a good note, I had (yes HAD) to get some new jeans yesterday. My big comfy pair actually fell off of me yesterday. Tad bit embarassing, but oh well, more clothes for the "gosh, just too big" pile! Oh yeah!

I will add in the water goal to the challege! I will get on here either Friday or Saturday to post the goals specifically for the challenge. Actually, I can re-adress them in another post after this one and see if it works for everyone.

The only other question I have is if everyone is in, do we just want to keep posting here and let everyone know how we are doing in a special section of our posts? I love the group here and wouldn't want to lose anyone to another thread. (Michelle did so well setting this one up.)

Let me know, and I'll go find all the Challenge goals and repost!
