Fresh Spinach
Okay so I am part of a weekly organic food delivery...I have a ton of the fresh curly spinach and not sure what to do with it. My kids don't like it just sauteed and I am not a fan of spinach salads...what can I do with all this stuff?

TOTALLY agree. I love adding spinach to my smoothies in the summer. Adds the fiber and you really can't taste the spinach (unless you go overboard). My favorite recipe is 1 container (single serving) of FF greek yogurt, water, frozen/fresh fruit and spinach all into the blender and puree'd. I also would add 1tbsp of ground flax seed for the omega 3's. Total was 3pp and SUPER filling for breakfast.

Add 1/2 banana or greek yogurt, Flax, Almond Milk, and some whey protein & you will have one AWESOME breakfast! See this recipe on my blog, under the May 2011 post!

I put it in everything. Casseroles, pasta, sandwiches, salads (mixed with other lettuces, it can be a really delicious flavor), soup, omelets, really anything you make. I go through about a pound of it a week, just adding it to things as free bulk and awesome vitamins.

OMG Okay I just made my 1st green smoothy for only 3 pts (momentum). I used 1/2 c almond milk, 1/2 c greek yogurt, 1/2 cup frozen unsweetened fruit, 2 cups spinach & liquid stevia!!!
Even my kids liked it!!!

Yeah I made a crustless quiche last weekend...I had 1 slice of the pie, my son had 1 and the hubby had the test (6 slices) between breakfast & lunch LOL
