Just a quick post...I had to work late tonight and I am ready for bed now!

I just wanted to let you all know that I did weigh in this morning before I went to work and I lost 1 lb....so thats a total of 11 lbs in 2 weeks. I did want it to be more than one pound but I can't say I did my absolute best with food this week so I'll talk it! And all I can say is I will give it my best this week! I really need to get exercising though...I know it comes off so much faster when you move move move!

OK sorry for not posting individually but I am really tired!

I'll catch up to you all later!

Unhappy Ok, I lied.

This will not be a big long post. I had a surprise visitor tonight and I am just now getting on the computer and I am pooped. Who was my visitor, you might ask? My brother! AND my new niece! In case I haven't told you guys, (I'm not sure if I have or not) my brother moved to Florida about 2 years ago and I have only seen him twice since then. Well, his wife just had a baby 3 weeks ago and I've just been aching to see her. Don't get me wrong...I love my boys and wouldn't trade them for all the girls in the world, but I always wanted a girl when I was pregnant with the boys and all of my cousins have had nothing but boys and my brother is the first one to have a girl and she's 14 hours away! Anyways, I'm sitting in the living room, minding my own business and who knocks on my door?! I was so excited, I started laughing and crying at the same time. I held her nonstop from the time they walked in the door till the time they left....I even got to feed her twice and change her. I was in heaven. Now I'm sad because I don't know how long it will be before I get to hold my niece again. {{{crying buckets here}}} He also didn't miss the chance to tease me that he drove all the way here to see me and I was running off and going to Bristol. He knew I was going to Bristol, he actually came in early, because he knew I would want to see her before I left.

Anyhoo, I keep making typos and this post is taking me forever because I'm so sleepy, so I'm getting off here for now. You probably won't see me again until Monday, but don't you worry, I'll be back, with many tales and pictures from the race. Have a wonderful weekend and I love you all.

And yes, I took a whole roll of film of me and the baby and I will share.

P.S. I knew that picture would bring you out Lucky.

No time for replys but I thought I would post a short one so everyone has something new to read when they come in.

I told you the other day I was going to try using cauliflower as a substitution for rice in my chinese meal. It worked pretty good.
I would not try to grate it like I did. The flowerettes are just too small to grate. Next time I am going to try my little chopper. I ended up just chopping it tiny with a serated knife. But the end result was... once you mix it in with all the chinese veggies and chicken and sauce you could not tell the difference. It had the texture of rice but not as many carbs. I will definitely do it again when I have chinese. Next time I am also going to try it as Mexican rice.

Tonight I made a frozen spinach and artichoke dish.
I will post the recipe on Sunday. It is almost like a dip but more solid. I can't believe it .... ME trying veggie recipes.
It is almost as shocking as Thin exercising.

Tomorrow I am making something with portabello mushrooms.
I don't know what yet... I have NEVER had one ... so if you have a good recipe... please let me know. I am getting into this veggie thing. LOL

WE also made some kind of pumpkin dessert. We used 1 can of pumpkin, a box of SF vanilla pudding, 2 cups of skim milk, and 2 tsp of pumpkin spice. It is better cold... real cold. I think that is all that was in it. My daughter really liked it.... I preferred my dessert I made for me. The one with crystal lite powder. I think I already posted it. I used the strawberry/kiwi flavor. Mmmmmmm
Thin... if you haven't left yet... how do you make your pumpkin fluff? I thought you used cool whip???

Okay. I am headed out to do some more reading.
I have to be off of this computer before midnight.
I am really trying to improve my bad habit of stayin up so late... and the first step to improving that problem is to bar myself from this computer after midnight.

Thankful I am learning to try new veggies.
Thankful I am liking them too. LOL
Thankful I am happier eating healthier than eating whatever.
Thankful I have this computer and cyber friends.

By the time you read this it will be FUN FRIDAY !!!
I am going to the movies for my mid-day fun.
I am babysitting my grandbabies for my evening fun.
I am going to let my 2 year old GB make something fun to eat and have a craft project for her too. I don't know what yet... but something FUN !!!!!

Alot of posts to read and catch up on, but I don't have time now. I am off to bed, it is late and I had a very long day. Just wanted to say that WI was ok, kinda dissapointed, I did really well and only lost 1.4. But am still happy with it, just gonna give an even harder try next week. Will include exercise. Gotta go, can barely type am so tired. Nite all!

Tina, I know your off to Bristol, hope you have a wonderful time. Funny thing, we have a town called Brisol here, it is the next one over from mine...

Deon, don't get discouraged I also have small losses some weeks when I think I have been so good. But I think it is our bodies saying OMG what are you doing to me? It will eventually give up the lbs and the scales will go down (patience)

2Cute, I make that pumpkin pudding all the time, I love it. And what I do is put some in a dish and top with some coolwhip and mix it all up in my bowl. Really great. And I will have to investigate this cauliflower thing for the rice. I have never eatten portabella mushrooms, always wanted to try them but don't know what to do with them. I love regular mushrooms. Please let me know how they were and what you did with them.

I don't think my fun Friday will consist of to much. I have this horrible cold. I have been trying to fight it off for 3 days now, but every morning I have woken up a little worse. I should probably stay home from work today, but I hate to use my vacation time and really need the money so I don't want to take a personal day either. Oh moms, we are super human. The kids have the day off today and Monday for teachers workshops, so I have to deal with sitters. They did get their report cards yesterday and both did well. Evan finally gets letter grades and kept his grades about where they were in November. He hates school, so for him to bring home 1 A 3 B's and 3 C's is a good thing in this house.

Well I will close for now and pop in later to read if anyone posted.....

Hi all! Just checking in before I get out of here. Couldn't leave my buddies in a lurch.

2cute: Here's my recipe for the Pumpkin Mousse:

Pumpkin Mousse

2 boxes of sugar free vanilla pudding
2 cups Fat Free (skim) milk
1 3/4 cups of canned pumpkin
3/4 tsp. pumpkin pie spice
1 - 8 oz. container of fat free Cool Whip

Beat the pudding, milk, canned pumpkin and spice together. Fold in the Cool Whip. Chill for a couple of hours.

Makes 6 - 1 cup servings 1 point per serving
You can use this in a Reduced Fat Graham Cracker Crust and serve as a pie. You will have to add 2 points per 1/8 of the pie.


Baylee: To transfer Sandy's Dr. Seusse all you need to do is put a floppy disk in your drive (or save to wherever you want). Right click with your mouse and choose 'save picture as'. Choose your drive and save it just like you would anything else. Then you can create an e-mail and use the file as an attachment. P.S. You can do that with any gif you come across here or anywhere else. Hope this helps.

Talking Friday FUN...

Hmmm...what do I have planned in the way of FUN? Well, let's see...when I'm done here, I will do my strength training tape, tidy up the house a bit, go to the school library to do my volunteer work, go to the real library to check out "Body for Life," anyone read this? I almost bought it online and decided, this time, I'll check it out before plunking down $$ on yet another book...but I digress...after that, I'm going to get some yard work done...just some clean up stuff, pick up branches, maybe a little raking...it's already 55 degrees out! YAY SPRING!! I have some pretty purple crocuses in bloom...my daffodils and hyacinth are getting ready...what a long winter this has been. I called to have the tree guys come do some pruning on the huge trees in my back yard. Spring Fever...I love it! Anyway...that's fun to me...getting outside and getting dirty! Dh always says I'm not happy inless there's dirt under my nails!

2cute...I LOVE portabella mushrooms! Are they the big ones, or the "baby 'bellas?" The big ones can be grilled and eaten like a hamburger... spray with olive oil Pam, slap on the George Forman for a few minutes, add some sauteed onions, peppers, whatever you put on a burger and there you go! The baby bellas are good for stuffing or chopped up in an omelet...my mouth is watering! BTW...I love the image I have in my mind of you and your grand daughter! I sure do miss holding and cuddling a baby!

...which leads me to... Tina! I'm so glad that you got a chance to cuddle and love your little niece! Have a great time in Bristol! Give Tony our regards! Have a wonderful honeymoon!

Don't have time to post this morning but....

Thin... thank you for the recipe. Sounds better to me because the pumpkin taste is diluted more using double of other ingredients than my recipe.

Is Pumpkin consider a veggie? someone said it is a fruit. ????

Baylee.... I chopped the cauliflower very small like rice... put it in a bowl and with a little water and steamed it in the microwave.
Next time I may just put the raw pieces in with the other chinese veggies and meat and just cook it all together.
I will let you know how the mexican rice/cauliflower turns out.
Have you tried cauliflower as a substitute for mashed potatoes, macaroni salad, mac & cheese ???

Deon... hope you had a good nights rest.
Just keep chugging along... it will pay off if you don't quit.

Tina... with you and Thin both gone this weekend the rest of us will have our work cut out for us posting here.

Good morning to you all. Just a second to check in. Hope you are all op. I am kind of a mess trying to get back in the groove. Between the vacation, the you know what problem and then the food poisoning, my food is either horrible or non existant. I could not exercise and am just feeling better to do that so I am getting out as soon as I get off here and go to the mall. I am ACTUALLY looking forward to it, can you believe it? All this sickness sidelined me pretty good and one more thing! I weighed myself while I was gone and my scales are totally screwed so I have to get new scales and then start from their with actual lbs lost. That is ok as you can see the loss on me. In fact, we went to the casino Tues and I wore my fanny pack. I have not worn it since we went down the last time which was before Christmas. The thing was WAYYYYYYY too big. Jack measured it and I have lost about 5 inches off my waist area which was a jazz.

Sandy: I loved the DR Suess thing. Very funny and OHHHHHH how true! I just want to tell you again how proud I am of you. You have really taken the bull by the horns.

Kat: It is very true that this country allows us to think as we wish. You must understand that being a Naval wife of 20 years I have very very strong feelings about it. I thank you for at least having the wonderful attitude to pray for our guys as some do not. They are doing the job they were sent to do whether they want to be there or not. Thanks for sharing with me.

Tina: Ooohh you must be in heaven getting to love on that baby. I am kind of sad because my daughter has decided to have her tubes tied and there won't be anymore grandbabies for us unless ds gets married somewhere down the road. I support her decision totally and understand though. Besides, even if I didn't it is not any of my business what she and her dh decide to do. Poor Thomas will just have to put up with all the extra love from me I guess!
