I read an article some time ago (in the NY Times?) studying the effects of different methods of cooking things on how well they passed nutrients on to the body...for example microwaving broccoli was better than steaming was better than boiling was better than roasting, but the order was different depending on the veggie in question. It might be worth a google search. I don't think it talked about calories though.
