  • I made a salad last week, you peel and seed the cucumber, about a lb of it, and cut it into long thin strips. Then you make a dressing with tamarind juice, fish sauce, garlic, thai chilis and a little sweetener. Toss the cucumbers with the dressing and add a handful of quartered cherry tomatoes. Yum!
  • I guess amounts would help. IIRC, it was 6T tamarind juice, 6 cloves minced garlic, 1/4 c fish sauce, 2 T sugar (I used agave, we're out of sugar), and chili to taste.
  • I love cucumbers and always have, so I don't know how to make you like them. As long as you like other veggies, it's ok to skip a vegetable you can't stand.
    For example, I HATE celery and the smell alone makes me nauseous. But I eat broccoli, green beans, and kale all the time so it doesn't matter if I hate celery.

    I add cucumbers to all kinds of dishes just to have them and will sometimes just eat the cucumber all by itself because I like it so much lol.
  • Its so funny because I have a hard time with vegetables but I looooove cucumbers! Raw, seasoned or in a salad. I have loved them since I was a kid. I have never had then cooked..I didn't even know that was a thing!

    I used to top them with that salad supreme seasoning but haven't been doing that recently.
  • egg salad sandwich with cucumber as baguette
    I recently used a cucumber as a baguette. I halved one lengthwise, scooped out the center, and filled each half with egg salad. It was better than a bread sandwich! The egg salad was just mashed HB egg with some Dijon.
  • I like cucumbers 'cooked' actually warmed (added at the end) in a veal stew with carrots, onion, a mix of tomato juice and broth, cooked down to thicken with fresh dill - very important to use the fresh dill. Yummmmmy!
    Arwen -I hated celery until I bought organic - no more bitter chemical flavour. Now I can eat 3 stalks at a time, lol.
  • I enjoy cucumbers but I HAVE to take off part of the skin. If I don't skin part of it before turning it into a disc, it upsets my stomach and I can only eat...5 discs a day? They taste great to me...until they start repeating and they always repeat.
  • I can take or leave them, I wouldn't go out of my way to buy one but if I come across something with cucumber in it I won't say no to it.
  • I love cucumber sandwiches, with thick white bread and plenty of butter!

    However, I also eat them sliced up, sprinkled with salt and drizzled with olive oil.

    ...Now I've a cucumber craving.

    Why do you need it ? Substitute another vegetable.

  • I'm like you - don't really like it too much, but I will put it in salads/on sandwiches for a refreshing crunch. Another way I like to eat it is with seasoned cottage cheese - mix black pepper and a little bit of garlic powder into cottage cheese and just kind of spoon it onto the cucumber. The simple flavor of the cucumber really complements the strong flavor of the cottage cheese. It's one of the few ways I like cucumbers!

  • The only way I like cucumbers is as a sandwich with mayo. Bread, however, is a big trigger food for me so I avoid it. Buying cucumbers just makes me want that sandwich, so I don't buy them. When I eat out, I leave them in my salad. I used to leave the green peppers too, but recently started liking them. Who knew your tastes would change after 60? LOL Just goes to show...never say never.
