Oooooooooh, roasted veggies are my favourite, although I've never tried roasting broccoli! I love slicing carrots, parsnips and sweet potatoes and roasting them with a little olive oil and kosher salt. If I'm feeling very generous with myself, I also slice up some Haloumi cheese and roast that with the veg. It's a really sturdy cheese that can keep its shape when it gets hot, and roasts beautifully. High in salt and cals, but worth it to have as a rare treat.
