cooked vs. raw vegetables
Is it still true cooking vegetables kills alot of the vitamins and nutrients in them? I like roasted vegetables and cooking the heck out of them... and I can I only eat them so much raw or lightly steamed.
Anyone have any good idea for eating them minimally cooked? Any good no calorie seasonings ? |
Someone better informed than I will hopefully chime in, but it is my understanding that the health benefits of some vegetables are actually more accessible to our bodies in the cooked for (carrots and spinach I think?). If you like veggies very well done I recommend soups where you end up eating the water that the goodies escaped into.
The bottom line in my opinion, is that eating lots of vegetables in general is a good thing, and if they need to be well cooked for you to get in 5 to 7 servings, then that is better than scimping on the lovelies. |
