Black Bean Hummus
Source: 1001 Low-Fat Vegetarian Recipes
1.5 c black beans (or 15 oz can drained, rinsed)
1/4 c veg stock or water
2-3 T tahini
2-3 clove garlic
2 T lemon or lime juice
1.5 T soy sauce
salt and cayenne pepper to taste
Blend all ingredients in a food processor until smooth (you can do this in a blender too, you just need to scrape down the sides a lot). You can play around with the seasoning too, sometimes I like to add some cumin or chili powder. Use as a dip for fresh veggies, toasted pita, or as a spread for wraps or sandwiches. Yum!
