Default How to make my own seitan

Hi

I've been trying to make my own seitan without too much luck. I have a couple of recipes, but I wondered if some more experiences seitan makers could give me some tips.

What methods have you tried? First time I tried, I did the boiling method which was a disaster. Since that, I've had success with boiling but it is still my least favorite method. I'm a big fan of the steam method which works every time.

Try any of these recipes, my favorites are the spicy sausage at the bottom and the turkey roast.

I've been interested in trying this because I tried store-bought seitan and found the texture disgustingly rubbery, so I'm wondering if I could make it with a better texture.

The recipe I used called for baking it in the broth. I thought it came out way too rubbery. It was only edible because the hot wing sauce I made to put on it was fabulous. I think part of the problem was that I didn't get the liquid mixed in fast enough at the beginning. Then maybe I also didn't knead it enough, but it was hard to knead! The seitan dishes I ate in vegetarian restaurants the last time I was in the states were all great, so I'm disappointed with my results.

Yeah, I don't think I'd call the italian sausages rubbery but rubbery seitan exists.

Vegandad is also a blog I don't follow but heard it is good for a lot of meat type substitutes and kid friendly stuff.
