vegan healthy korean rice cake soup
so i'm completely obsessed with "tteok" - korean rice cakes. i could eat only that forever and never complain.
but i have to limit myself. and the street tteokbokki you get is not the healthiest.
so i've learned to modify and make my own and it's delicious.
boil 4 cups of water, add some soy sauce, and at least 4 big spoonfuls of gochujang, korean chili paste.
add one chopped onion, 3 green hot peppers, lots of chopped greens, 1 bunch of enoki mushrooms, and the long thick tteok noodles.
boil for a few minutes until the tteok gets soft.
