Kidney beans and sweet potato curry TDF
Fry 1/2 cup onion gently in 2 Tbsp olive oil.
1 tsp turmeric
1 tsp cumin
1 tsp coriander
1/4 tsp cinnamon
1/4 tsp dried chilli peppers
6 cardamom pods
(All the spices are ground apart from the cardamom)
and stir so it coats the onion.
1 x 15oz can kidney beans, drained first
15 oz raw sweet potato in 2" cubes
1/3 cup shredded coconut
1 Tbsp lemon juice
1 cup bouillon
Bring to a gentle boil, cover and simmer, stirring frequently.
Serve when the sweet potato is soft but not breaking.
I divided this into 4 at 254 cals, 37 carbs, 4.36 fibre, 5.59 protein 10.3 fat, of which 3.55 saturated, 0 trans.
It's quite a small bowlful but very tasty. I served it with a flatbread. Mmm mmm mmm mmm mmm.
