HI have you read eat 2 live it a good book gives some great diet pointers also take a look at fatfreevegan.com I love that site the recipes are really good and there are a lot of them. I myself find being a vegan to much for me at this time but I'm still strict with no meat.

Okay I check it out but it does not have cal, fat and all of that on there. I need that info before I put anything into my mouth

As long as your eating fruits and veggies and watching your carbs and be balanced calories shouldn't be a big problem. Did you get a chance to check out eat 2 live? the program is very good and balacned. Also you might want to check out a food convershion program or chart where they take the recipe and and tell you the fat, cals, ect. also fitday.com has a the nutrition info for you when you eneter the food.

Yes I do fit day but just thought it was easier to do a recipe with cal and all vs having to enter everything in and then divid by serving.

Keeo a food log for a week or 2 and see if you actually need to eat more.

I did that and discovered I was actually taking in 500-600 calories a day when I thought I was getting 2-3 times that.
I was eating a lot of salads and vegetables and tofu and not enough calories.

I'd reckon fat saving mode can have kicked in if you eat less than 1200 cals. Maybe try quinoa, pretty calorific and butternut squash. Olive oil on salad, corn on the cob, bran flakes, wheat germs in soya yoghurt...
And mine, Ssarah's and Junia's team (we welcome others, the more the merrier!) is now in the veggie challenged section, but I think it might be moved to veggie chicks or maybe alternachicks.

Thank you everyone. I have been going to the health food store here called mother earth. I take my time and spend about an hour a week in there reading up on stuff and looking around and asking questions to other customers and employees. I have found new things to add tofu to. I am going to check out your site that you have thank you so much.
