Pretty much what I eat every work day
Breakfast: 2 pieces of ezeikiel bread toasted with almond butter, tomato, walnuts, nutritional yeast, and lemon pepper
Lunch: Home made veggie soup with beans, lentils, and quinoa
Snack: Edemame beans
Dinner: A simple curry dish with red beans, tons of veggies, and curry powder
Peppermint tea for desert

Tofu fried in marinade (1 tbsp sriracha, 1 tbsp light soy sauce; 1 tbsp rice vinegar), a bunch of steamed broccoli (marinated in chili, light soy sauce, sesame oil, rice vinegar; toasted sesame seeds) and a bag of Uncle Ben's whole grain rice.

I also treated myself to a grapefruit.

[Worth noting is that I also take daily multivitamins to cover my requirements of Vitamin D and B12.]
