Default Eat to live by Dr. Fuhrman

Hello all!

Has anyone read the book Eat to live by Dr. Fuhrman? I'm trying to find more information on this book, but I was looking at some vegan recipes on the web and they were promoting this book and his diet. I just wanted to know if it was basically a vegan diet and if anyone has read the book. If so, is it worth buying?

It's definitely a vegan diet. I tried it for a while and liked it. However, I had to gradually work to that level. When I first heard of the diet, I thought it was too extreme and I'd never be able to do it. But my tastes have gradually changed over the years, and my vegetarian lifestyle gradually moved to vegan for a while. I'm neither now, because I eat seafood, but most of my meals just happen to be vegan. I liked Eat to Live and may return to it.

Eat to Live six week plan in a nutshell:
Unlimited raw vegetables including raw carrots (goal 1 lb daily)
Cooked green vegetables (goal 1 lb daily)
beans, legumes, bean sprouts, and/or tofu ( 1 cup daily)
fresh fruit (at least 4 daily)
Not more than 1 cup per day of cooked starchy vegetables or whole grains, including cooked carrots, corn, winter squash, breads, cereals
1 oz max raw nuts and seeds
2 oz max avocado
1 Tbsp ground flaxseed

No dairy, animal products, between meal snacks, fruit juice, or dried fruit

It is basically vegan - although the book has a non-vegetarian menu option. I have been mostly following it and it's effective for weight loss. But, I think it's really beneficial for my health in general - I certainly feel good on it. I recommend it to people.

I've followed it in the past. It ended up being 1,200-1,500 calories daily when I counted. I am thinking I may give it another go, as it is close to how I eat (on plan) anyway, but I found it difficult to not eat more beans or legumes though and it's more restricted in fats than I prefer to eat (I like a bit of coconut milk, soy milk or olive oil).

Well, from the information I read on the web, it seems like a really healthy alternative. I might do the 6 weeks program after all. I will try to find the book at my library.

Hi! This is the diet that I am on. I've lost 23 lbs since August 16th on it. I have been eating a few more cooked items this week and my weight loss slowed a bit, but I feel wonderful!

The greens make all the difference!

I checked out the book from the library and I think I am at a stage where I can follow it. I haven't decided if I will ease myself into it or if I will go for it from the start.

The one thing I wish it had though was a food list. I see the general guidelines but I don't see a food list. One particular thing I was wondering about is beets. I have a wonderful raw beet recipe that I want to make.

Nelie, it's my understanding that beets are a starchy vegetable, so would be limited within the 1 cup total cooked grains and/or starchy veggies per day.

That's pretty much the only limit in regards to vegetables, other than limiting avocado to 2 oz per day.
