Healthy Challenge Chicks Recipes

  • Anyone can post. Just thought it would be nice to have some fat free, low cal, low sugar, low sodium with minimal ingredients or any other recipe that anyone would like to add. If possible try and add servings and calories, etc...and a name for your recipe.(ie, Echiladas a la poof )

    Be nice to go to in case we have no idea what to cook someday.
  • Figure out the calories by writing everything down as you put it together then divide by eight. Add or subtract ingredients to make it more or less calories.

    Chicken Enchiladas

    Makes 8 servings...

    Ingredients:
    4-frozen chicken breasts
    1 large can crushed tomatoes
    Fat free cheese of your choice
    chili powder, cumin, oregano, and garlic salt
    8 low carb low fat tortillas
    (optional: sliced black olives)


    Preheat oven 375 degrees...

    Chicken mixture:
    4-3 oz frozen chicken breasts boiled and shredded adding 1/2 cup sauce and 1/4 cup fat free cheddar cheese. Mix it up and set it aside.

    Sauce:
    1 large can crushed tomato sauce(20 cal for 1/2 c) with chili powder, cumin, oregano, and garlic salt. Simmer for 10-30 minutes.
    8 low carb low fat tortillas(80 cal each)

    1. Put small amount of sauce at bottom of large 9x14 baking dish to coat bottom pan.
    2. Roll shredded chicken mixture in each tortilla.
    Spread rest of sauce over top of tortillas.
    3. Wrap in tin foil.
    4. Bake for 30 minutes at 375 degrees.
    (Start brown rice and make salad)
    5. Place 1/4-1/2 cup fat free cheddar on tortillas replace tin foil and let sit until cheese is melted.

    Serve with brown rice and salad.
  • Egg Potato Surprise

    Makes 4 servings

    285 calories per serving

    Ingredients:
    2 2/3 c. Frozen potatoes O'brien
    10 frozen beef lite sausages
    6 eggs
    Garlic salt and pepper

    Spray pam at bottom of pan. Cook potatoes, and lite sausage until done. Add Garlic salt and pepper to taste. Add eggs and scramble until done.

    Divide into 4 servings. Serve plain or with 1 tbls Ketchup(optional add 15cal).

    Spanish Rice

    Oh I did want to add that my spanish rice is also healthy for me plus it taste great! The only thing I hate is it takes like 50 minutes to an hour to cook!

    When I used to do it with white rice it was alot simpler.

    1 pound of wheat rice
    2 8oz cans of tomato sauce
    2 8 oz cans of water
    1 bell pepper chopped
    1 onion chopped
    2 cloves of garlic chopped (I have now heard it is best to consume garlic raw within an hour of chopping so you may want to put it on after you are done eating)
    1 tbs of extra virgin olive oil

    I coat the pan with the oil. I add the rice and bell pepper and onion and garlic, add the tomato sauce, put water in the cans, pour into the mixture. Stir it all together, add any other spices or a little salt if you wish. Put it on medium heat and voila! You have spanish rice in about 50 minutes. Now you do need to keep an eye on it and after 20 if there is hardly any fluid in it and still hard you may need to add 1-2 more cans of water. Especially with wheat you may need to add alot more so just keep checking it. But once it is done it tastes just as good as white!

    Peanut Butter Cheesecake Cupcakes

    Ingredients:

    8 oz. LF Cream Cheese [softened]
    1 large Egg
    1 & 1/2 Tablespoons Vanilla Extract
    2 tbls sugar
    4 Tablespoons All Natural Peanut Butter

    Directions:

    Mix all ingredients and blend for about 5 minutes.
    Line muffin pan with muffin cups
    Fill with mixture
    Bake at 350 for about 20 minutes.

    Makes 6.
    1 serving 206 calories

  • Egg delight
    makes 1 Serving: 280 calories

    2 pieces sourdough bread toasted(110 cal)
    1 fried egg over medium using 0 Cal Pam (80 cal)
    2 lite beef sausages (80 cal)
    1 tsp. fat free Mayo

    Place lite sausage in microwave as instructed on package, place sourdough bread in toaster.

    Heat skillet, spray with Pam cooking spray, fry egg over medium.

    Place 1 tsp FF mayo on both toasted sourdough bread pieces, place egg in middle. Slice sausage in half long ways and place on top of egg.

    Salt and pepper to taste and enjoy!
  • Okay everyone the verdict is in!!! Yes I actually tried this the other day! Oh my Lord!!!! This bread is awesome!!!!!!! Joey was floored, so was I. This exceeded our expectations and none of us could stop eating it! There are 7 of us and we went thru two loaves and one piece out of the third one!!! Joey said he wants to call it, "Sarah's Sweet Angel Bread".
    hahahaha I am so stuffed right now!!!!!!!!! I had 3 regular bread pans and used one round cake pan. I am going to be using this as my main recipe! It was so soft and tender and a little sweet but not sickly so. Oh my!!!! I am usually a huge sucker for store brown and serve rolls and these were even tastier IMO. I can happily say goodbye to white bread forever now!

    The all wheat did just fine, I did not use any white flour, just King Arthurs 100% wheat, can't wait til I can grind my own!I used the molasses too, and I used real butter(as usual), and greased the pan in real butter too. I did melt some butter and brush it on the top before baking the way some people recommended. I even took a few pics. I know, I am a dork. Lighting is bad and he didn't use the flash but oh well. This is the one that was in the cake pan![/color]

    Wholesome Homemade Honey Whole Wheat Bread

    3¾ hours 3 hours prep
    2 envelopes yeast
    4 cups water
    1/2 cup butter, softened
    1/4 cup molasses
    1/2 cup honey
    2 teaspoons salt
    6 cups whole-wheat flour
    4 cups white flour

    1. Dissolve yeast in warm water.
    2. In a large bowl, combine butter, molasses, honey and salt and mix well.
    3. Add yeast mixture and then gradually add flours.
    4. Turn onto floured surface and knead until smooth.
    5. Place in buttered bowl and let rise until double.
    6. Punch down and let rest for a few minutes.
    7. Divide dough into 4 parts and shape into loaves.
    8. Place in greased pans and let rise for about an hour.
    9. Bake at 375* for 35 to 40 minutes.
