Default Agave Nectar?

I was reading alot of the recipies and seen this sweetener, I had never heard of it before so I decided to take a look online.

So here is the question when I go to buy some should I buy light or amber?
What is the difference?

Hi! (a fellow Georgian, I see! I am in Duluth...where are you?)

I like both the light and the amber agave. If you plan to use it for sweetening tea or coffee, you might like the light better. It tastes like a very mild honey. The amber is a little stronger. The flavor to me is not unlike a mild caramel/molasses flavor. They are pretty much interchangeable as far as using them in recipes. I get mine through Amazon. Make sure you get the blue weber agave. It has a lower GI than the wild agave. If you are near a Whole Foods, they carry it. Sweet Cactus Farms is a good brand. I can't remember the brand I get at Amazon. They have it by the case in a larger bottle pretty cheap.

Okay I am jotting those brands down, I'm keeping alittle book of ideas and things people mention so when the near end of August comes and I can buy everything I need to start I won't be scurrying around for answers and such.

I am from Griffin, pretty boring. Lol
