Rhubarb is one of favorites and I really look forward to it, too. It tastes like Spring to me.
I make strawberry/rhubarb sauce, rhubarb custard pie, rhubarb crisp, and many other rhubarb desserts as the recipe says, just substituting SBD friendly ingredients where needed, with great success. Remember, SBD is all about eating normal and healthy everyday foods, using healthier ingredients.
I also like to add cubes of rhubarb to my salads. Delish!
