Default Chicken Pot Pie

Anybody made a good SB friendly chicken pot pie??? I have been DYING for one!!! I know it's going to be hard to get it to thicken up w/o using any kind of "cream of" soups...but figured I'd ask.

I imagine you could make a thin ww crust, and for creamy soups I have been making a zucchini soup with onion, veggie broth, and zucchini with a scoop of sour cream... it tastes good and creamy, I bet you could make it more condensed with very little water maybe with mushrooms instead of zucchini then mix in your veggies and maybe cook one the stove until some of the water evaporates if you think its still too runny... Here is essentially how I make the soup(I can't remember if I posted here before or not)

But, I would probably reduce the liquid to a half cup or so before blending it. and use mushrooms and celery instead of zucchini maybe use a real blender instead of an immersion blender since there will be much less liquid- I would reserve it and just start adding little by little until you get the consistency of more condensed soup ...

Well, you have made me want some no-chicken pot pie! LOL, I think I am going to try this too! but maybe just pot pie filling and then I can make dh's with biscuits on top or something...lol
