Veggie of the Week: Mushrooms!
So...I know we're all trying to add more veggies into our diets. We're not sure what might be out there...and even if we find a new veggie, we're not sure how to cook it, what it would go well with, and whether anyone in their right mind would even try it! :lol:
Here's a place to share all that info with each other! Each week I'll post a new veggie along with information on nutritional value, how to cook it, and at least one recipe using that veggie. Then we can all add on to the thread with our experiences with that veggie, recipes we like, and more! When the week is up, I'll transfer the thread to the SBD Recipes forum and the recipes to their respective recipe forums. mmmmm, I love mushrooms!!!
Morningstar Mushroom lovers burgers are great all by themselves ;) Last night I made some stuffed mushrooms, here are the basics, and of course the recipe is just me throwing things together so you can alter however you wish!!! I took 6 clean mushrooms and took out the stem, chopped the stems in tiny pieces and sauteed in about a tsp olive oil with a veggie sausage link also chopped into small pieces. then I added 2tbs parmesan cheese and stuffed all that back into the mushroom caps. I drizzledanother tsp of butter over the top and baked for about 20 minutes at 400. I made 2 servings out of this(3 mushrooms each) but used them as an appetizer. These could really be the whole meal if served with a big nice salad. I would also recommend adding chopped oinions, red peppers, etc. |
I love mushrooms! Even if I don't have a "side dish" with them, I often saute them and put them on top of dishes anyway.
My favorite way to cook them, though, is to take an assortment of them (button, portabella, cremini, oyster, shiitake) saute them in Smart Balance, add a little chicken bouillon, parsley, garlic, and onion powder. Deelish! |
we had beef stroganoff last night, with about a lb of sliced mushrooms...YUM!

I don't understand people who don't love mushrooms. I eat them with everything. Tonight, in fact, we're having portobello mushroom cap burgers. Yummy!!!!

Mmmmm, do I ever love mushrooms! I add them to almost everything, but I especially like them grilled with onions and garlic on my Foreman grill. A favorite simple, but delicious meal is to stuff portobellos with a mixture of ricotta, beaten egg, a little pesto, and mozzarella cheese, baked in marinara sauce. ;) I've found that if you precook the portobellas before stuffing them, they won't be as watery, either.

we love mushrooms here. Often after I pan fry them in just a little olive oil I will had some baslamic vinegar and let it carmelize. It makes a great side dish. I also use portebello mushrooms as a base for pizza.

I should say, I hate raw mushrooms. There's a fungus-among-us!
But cooked? HATED them as a child. I always joked when I matured (sometime during undergrad) I started liking them. Now, I ADORE cooked mushrooms. YUM! |
I'm sauteeing some to add to my pasta and Popeye marinara tonight. Sophie, I may try a little balsamic on them :)

Okay, I must be the odd one out. I can't get the desire for mushrooms at all, no matter how they are cooked. Kind of like avocados. Can't stomach those either. I jsut don't like the taste. I love looking at them in the store and I WISH I could like them because you can add them to so many dishes...
But I just can't. Can anyone help me appreciate them? Anybody have a great recipe that makes mushrooms into the equivalent of chocolate??? ;) |
Ohana- have you considered trying different types of mushrooms? I don't know that would do it or not, but its worth a shot!

Ohana, I hear you--I had to learn to like lots of veggies and I'm still working on some, like brussel sprouts. I adore avocado, but I understand why they might seem weird. DH has some kind of allergy to them--his intestines are very unhappy whenever he eats avocados. More for me, I say! :devil: Have you made the Taco Bake? That's a great way to get some mushrooms in--I don't think you'll know they're in there at all! One of the ways I learned to like veggies was eating them on pizza and mushrooms are awesome that way! Mushrooms also take in a lot of flavor from whatever you cook with them, so if you like something like garlic, try adding a lot to the mushrooms and I bet you'll find them more palatable. |

Thanks for the ideas. I'll definitely try the garlic with my mushrooms. I LOVE the taco bake, but I do change the recipe a bit in the way that I omit the mushroom part. I'll have to get brave with the mushrooms though and see if I can find some way of eating them that will make it bearable for me. |
