Question Any way to smooth out ricotta?

I had my first serving of Ricotta cheese for dessert tonight. It's a bit to grainy for my taste. Do you think I could whip it with a hand mixer or would it break it down too much. I've never used Ricotta before SB.

Hi and to The Beach.

Yes, it can be a bit grainy. I whip mine with the mixer or in my wee food processor, sometimes with a bit of milk or an egg white, and that seems to smooth it out.

Default It's not that bad

I had Ricotta again last night, and the second time around it wasn't as bad. I guess the first night I was expecting it to be more like cream cheese. It's more like cottage cheese.
