Chela.. have you checked out the Recipe section? There's a few mexican-like recipes there, like the taco bake and salsa chicken.. On phase 1 no tortillas --but you can use Whole Wheat tortillas when you move to Phase 2. You could make your traditional meals without the tortillas for the 2 weeks on phase 1
For folks that like sandwiches, we opt to replace the bread with lettuce leaves and make a wrap from that. Hope this helps.
