... I have cod fillets, baby eggplants (they were too cute not to buy), chinese leaf, miso paste and the usual staples.
Anyone have any ideas on what I can do with them for dinner? I was thinking maybe miso-glazed cod (using sweetener instead of honey and brown sugar of course) but sauted eggplant seems kind of boring and low on taste.
Barb, I don't know if Rotel is available in the United Kingdom - I know it's not here in Canada. I use regular crushed tomatoes and add cayenne of hot chopped peppers to it.
The black bean and Kale might go well with this entree too. Baby eggplants work well in a stir-fry.
