Talking Just for Fun - Veggie INVENTORY!

This morning I tackled the fridge and sorted out the veggies. I made up four pounds of chopped veggies for the Girls. (Yes, they eat raw veggies!)

Here's what I have left...so silly for one person:

cabbage, spaghetti squash, 3 sweet potatoes, sweet dumpling squash, onions, celery, baby carrots, grown up carrots, English cuke, rutabaga, Chinese radish, baby bok choy, cauliflower, broccoli, green beans, 3 green peppers, 2 red peppers, grape tomatoes, parsley and cilantro!

Would anyone like to come over for a meal? These are all full packages as I used up the odds and sods for the Girls.

What's your veggie inventory like?

Ruth - that is so funny my dog eats veggies too. He loves them especially whole tomato slices like you find on hamburgers, sandwiches etc...

hmm...kind of broke at the moment but I have beans, iceburg lettuce, green beans, broccolli ... yep I think that is about it.

Celery, Redleaf lettuce, mushrooms, cukes, tomatoes, scallions, onions, shredded cabbage....

I know what you mean, I waste more food ..always buy tooo much!

Ruth, You have got to be the Queen Bee of Vegetables- especially per capita!
Okay, this is from memory:

Fresh:
1 large container grape tomatoes
2 different types of salad mix
2 bell peppers
2 white onions
1 red onion
1 head of cauliflower
1 avacado - Wait, I threw that away last night
tupperware of olives
2 bunches of radishes
1 small tomato

Frozen:
1 bag brocoli
1 bag mixed vegies
1 bag santa fe style mixed vegies
1 bag green beans

1 Huge jar of whole dill pickles (that counts, right?)

I have a whole ton of canned stuff (that doesn't count, huh?)

I have a tiny fridge so it does look like there's more in there

** That's for 2 of us - me & one hulky hunk of a man - my hunny! **


What's baby bok choy???

Bok choy is a type of Chinese cabbage. The baby ones are great!

3 yellow peppers
2 red peppers
2 ornage peppers
2 jalepenos
baby spinach
hearts of romaine
whole mushrooms
celery
onions
zucchini
cilantro
flat leaf parsley
basil
campari tomatoes

frozen-
4lbs broccoli florets
cauliflower
chopped spinach
brussel sprouts
mixed chinese
mixed vegs
cut green beans
snow peas
edamame
summer squash

then there's the jarred things like artichoke hearts, olives, roasted peppers, etc

yeah perhaps we got a bit overexcited, lol

I am desperately short of vegetables, in fact I will probably have to hit the grocery store after I get out of school. I think I may have a couple of bags of frozen vegetables (maybe brussels sprouts and spinach) but that's about it...

Hey, thanks, ladies! I was just sitting here trying to come up with some veggie sides that I hadn't used in a while and thought I'd drop in to see if I couldn't scavenge some ideas here.

I am not at home right now, but if memory serves, my veggie inventory looks about like this:

iceberg lettuce
roma tomatoes
black olives
green onions
red peppers
sliced mushrooms
carrots
celery
cauliflower
broccoli
frozen chopped spinach
yellow onions
grape tomatoes
canned green beans (regular and low-sodium...trying to cut out the sodium from my diet now but haven't used up the old cans yet)
canned sauerkraut (perhaps a lost cause now as this was bought LONG before my low-sodium efforts)
canned mushrooms
frozen pearl onions

Gotta run to the grocery store tonight, though, cuz the asparagus I had went all mushy on me. Grr...

I have napa cabbage, green cabbage and red cabbage
red onion, yellow onion and frozen diced onion
green onions (scallions)
cilantro
red peppers
frozen banana peppers
frozen green and red bell peppers
frozen okra (from the garden)
carrots
celery
mushroom
canned straw mushrooms
zucchini
broccoli
garlic
ginger
canned tomatoes
Rotel
canned blackeyed peas
canned green beans
canned wax beans
canned kidney beans
frozen veggie mix (broccoli, cauliflower and carrots)

I just used up the last of my spinach and bean sprouts

Ruth! Here I thought this might be an inventory of ways to use veggies... I have a feeling we all have some serious stir fry in our future!

I have the horrible habit of buying veggies that 'just look so good' (who would've guessed I'd EVER feel that way about veggies???) even though my whole week's planned and I have no time to cook them. Ugh. I was good today and bypassed the 2 lb container of haricots verts at Sam's even though I was drooling. I'll plan them into next week's menu and get them.

Right now, everything in the fridge is either going to us or the bunnies (our veggie eaters here):

head of green leaf lettuce (buns)
dill (buns)
parsley (buns)
Baby Spinach (3 lbs) for us and buns
Mushrooms
Grape Tomatoes
Broccoli
Turnips
Sweet Potatoes
Carrots
Onions
Tricolored Bell Peppers

Think that's it...we rely on lots of frozen veggies here. I have a freezer full of green beans, broccoli, etc.

various lettuces and bagged lettuce blends
huge Costco bag of spinach
ditto of broccoli flowerets
ditto of scallions
ditto of haricots verts
celery
baby carrots
1 3/4 English cukes
6-pack tri-color sweet bell peppers
3 medium-sized red potatoes
onions
bagged shredded cabbage
radishes
three kinds of miso (does miso count?)
cherry and "on-the-vine" tomatoes
frozen green beans
frozen artichoke hearts
frozen snap peas
frozen petit peas
canned mushrooms, tomatoes, and assorted beans
various dried "sea vegetables"

...and this is "running low"! I'll be heading out to the grocery store soon.

Maybe I should make veggie soup for dinner!
