Default Quick & Easy Lunch Help

I've realized one aspect of the diet that I need to improve for myself. I need help with lunches. I'm really short on time & haven't quite gotten lunchtime together. I really love the idea of making stuff ahead of time & freezing it but my freezer is tiny & I don't have any room in there. I drive home for lunch so that gives me about 1/2 an hour to prepare & eat my lunch each day. I'm on Phase II. What do you ladies do for lunch? Do you know any quick and easy recipes? What are the best store-bought soups? Are there any frozen dinners besides the yucky SBD ones that we can eat?
HELP ME! I foresee my demise if I don't get some help!

Home made soup would be great. You could make up a batch on the weekend and reheat or freeze it.
Same thing could be done with a ww pita - tomato sauce, veggies, some OP meat and cheese. That would take 10 minutes at 400.
Fish or egg salad could be made ahead and served on greens or ww toast
Eggs? Leftovers? A protein shake?
I think most frozen dinners are FRANKENFOODS so would avoid tham although I know they are handy.
I'm sure the rest of the chicks will cluck in with ideas.

You know the South Beach frozen meals are really good? I especially like the beef with cheese and broccoli!

I take coldcuts like Low sodium Ham, smoked turkey and sometimes hard salami and spread LLC on them ..

I do ww wraps with lf cheese, veggies (usually cukes, sprouts, lettuce, tomatoe, avacado, spinach, or some combination of the previous), sometimes meat, and a tiny bit of salad dressing...or I do leftover homemade soup

I posted a quick and easy tomato and spinach soup recipe and a yummy tuna salad recipe the other day

I usually end up with whatever I made the night before, assuming dh doesn't scarf it down before bed...

I discovered something the other day - a sliced tomato with pesto sauce over it - and then some low fat mozarella - and then broil it until the cheese melts. It was pretty quick and tasted AWESOME!!

I love making italian salads. Just some iceburg, turkey pepperoni, some LF mozzarella and Carb Well Ital Dressing. If you like you could add cherry tomatoes, olives anything that strikes your fancy!

Avoid the iceberg, and use romaine or spinach..Iceburg has no nutritional value.
