Welcome, I would show him the recipes like Taco Bake and Pizza casserole. I add tortilla chips to his taco bake (you dont need them!!) They are easy to add to SB...

Also when he makes something ask him to put the bad carbs on the side so you dont have them on your plate. That's what I do with my family. Like spaghetti, I make them noodles and boil up zucchini strips for me! YUM!!! I also make an extra vegetable at dinner to fill up the voids on my plate.

My husband is doing SB with me and is doing great. He has been motivated by the diet (and also the upcoming Men's Softball League Season) to get into shape and is exercising every evening. Our favorite recipes so far are the eggplant lasagna and anything with Spaghetti Squash. Spaghetti Squash is so awesome! I was a HUGE pasta fan before SB and now I would pick the squash over the regular pasta anyday!!!

Just find recipes that are yummy that don't make you miss the carbs, like the lasagna or here's my variation of an old recipe that my mom made called Pizza Spaghetti Bake.

Cut the spaghetti squash lengthwise, take the seeds out, and place in a large pot with water. Add a little salt and olive oil. cook until tender. Pull out of pot and cool for a few minutes. Strip the squash by running a fork down the inside of the squash, it will shred like angel hair pasta. Then, drain using a kitchen towel or cheese cloth. Squeeze the moisture out. Then spray a 8" round cake pan or deep dish pizza pan with cooking spray, and spread the squash in the bottom layer. Cover with sugar free/SBfriendly tomato sauce (I make my own using spices and a can of crushed tomatoes), then top with your favorite pizza toppings and bake at 350 degrees until cheese is melted (about 10 minutes or less). Let cool for a few minutes and serve. This is super yummy.
