Default Phase I or II recipe???

Chicken Stuffed Peppers - South Beach Diet Recipe (Phase 2)
2 cups boneless skinless chicken breast -- cooked and chopped
2 red bell peppers
salt and pepper
1/2 cup onion -- chopped
1 medium zucchini -- chopped
3/4 cup part skim milk mozzarella cheese -- shredded
4 tablespoons parmesan cheese -- grated
2 tablespoons boursin light cream cheese
3 cloves garlic
all purpose herb seasoning
Saute garlic, onion and zuchini.
Prepare pepers for stuffing. combine all other ingredients(except the parmesan) and the sauted vegies in food proceseor and process till smooth add dash of ff/ half and half if needed to thin a little.Fill pepper shells then bake at 35 for 30 minutes top with parmesan and bake at 400 an additional 10 minutes. Remove and let rest 10 minutes before serving.

Got this recipe from another board, why is it only for Phase II???

Lou Lou, there's a fair bit of cheese in it... that may be the reason. If you cut back on the cheese, I don't see why you couldn't use it during Phase I.

Thanks Ellis! I just ate one

I will cut back on the cheese next time. Hope I didn't blow my diet. Will freeze the other pepper for Phase II.

The recipe wasn't bad. But I would like a little more crunch next time. Maybe more veggies, peppers, broccoli and cauliflower.

Mmmmmm ... sounds yummy. I forgot to thaw meat today so I put aubergines, zucchini, capsicum, mushroom, fresh rosemary and olive oil in a dish in the oven and baked for one hour. I discovered the red onion and garlic once it was half cooked so too late to add it. It was so yummy and filled me up. Similar tastes to this recipe I think.

Hi Lou Lou Thanks for the recipe it looks yummmy !! I never thought of puting chicken in the peppers other than ground meat. But again I'm not a great cook.I really don't know if its the cheese or not, according to the book there are no limitations on cheese Have a great day. Hugs BB
