I think so. they are not a root or a fruit or a seed - they are stem like asparagus and celery. Go for it! Ichecked on Fitday and they are about the same as asparagus, maybe a bit more calories and carbs but still good.

I done a web search....

list Bamboo shoots as LOW Gi, along with alfalfa, cabbage, celery etc.
It doesn`t give the actual GI number, but at least it is low.
