Absolutely the chili is a great idea! Your non SBD fam members will never know it is diet!
I find that making a quick chef salad takes five minutes and is easy to transport...just use 50% fat free cheddar cheese cut into little pieces (or shredded from a bag) and cute up lean lunch meat from the deli, throw in little tomatoes and some cucumber and green pepper along with tons of lettuce and you are done! I had that for a quick lunch yesterday and it worked great!
Also, have you thought about using veggie burgers that are OP? I haven't looked at mine closely, but you could micro one with a bit of cheese and have that and a salad. Yum!
I think you could make the turkey roll ups ahead of time and have those as snacks and lunch. Also, we have leftovers from last night's dinner for today's lunch. We just put the leftovers into small containers and then just have to grab one on our way out the door! Very fast and easy!
