Egg muffins
I can't take credit for this recipe as Leens, the moderator of Depression and Weight Issues and good friend, posted it somewhere else. I made it this way and DH loves them.
I mixed together 8 eggs, a shredded zucchini, 4 fried and crumbled slices of bacon, a cup of mozz cheese and put it all in 6 of those huge muffins cups after I sprayed them with Pam. I baked them at 350 for 20 minutes until they were browned a bit.
Next time I'm making them with pepperoni, mozz and oregano. How about low fat cheddar cheese with broccoli and maybe a touch of onion? The variety is endless.
2 cups eggs(I use cholesterol reduced egg beaters)
1 package frozen chopped spinach
veggies of your choice( i like mushroom, onion, red pepper)
1/2 cup reduced fat shredded cheese
salt
pepper
spray muffin tins with vegetable spray, mix all ingredients
Bake for 20 mins at 350*F
Makes 12
Keeps well in the fridge for 4-5 days
Approx 70 cals each (fat depends on cheese/type of egg substitute used)
