rice paper wrappers?
I am having trouble....craving springs rolls made with rice paper wrappers but I don't think they are SB friendly. Anyone know? Worth splurging on if I make them with lots of veggies, shrimp and herbs or would I be shooting myself in the foot.

I'm assuming you are on Phase I and would have to say no since rice is not allowed. How about doing them in a lettuce or chard leaf?

Hmm, you could use cabbage to wrap it instead? Rice paper isn't really whole grain and not really allowed in p1 or p2. Maybe as a "treat" once in a long while and it would depend if it's gonna be fried or just cold-wrapped.

I didn't even THINK about lettuce or chard or cabbage. DUH!!!! My cravings were blinding me! I think I will go see what the store has in stock and try a couple of different ways for dinner. Thanks Ladies!

You can always eat them as a stir-fry. There is a Crack Slaw recipe in the recipes here, you can also google it to find lots of variations. Use one of the recipes as a guide and add the asian flavors you would like. Crack slaw completely satisfies my asian food cravings.

Or make the filling as a salad? The last time I made spring rolls (pre-SBD), I was blown away by how good the filling was [romaine lettuce, cabbage, green onion, shredded carrots, mint leaves, cilantro, basil ... I think my recipe had tofu, but it would be great to substitute or add shrimp. The sauce was sesame oil (just a tiny bit), soy sauce, garlic, lime juice... many recipes include sugar, just leave it out.] You could make a SBD-friendly peanut sauce for "dressing."
Also, my recipe included rice noodles - I have found brown rice noodles at Whole Foods so this could become an entire Phase 2-friendly "Insides of a Spring Roll" salad. Yum! I like this idea... |
