Is this menu OK?
 
Please help me with my menu. I will be eating this for one week straight then changing it up a bit. I am a nurse so i am looking for quick meals.

B- 2 hard boiled eggs, v8 juice, coffee 1% milk and splenda
S- 15 pistachios
L- Large salad with grilled chicken and low fat ranch
S- 15 pistachios
D- veggies chili from the SB book, salad with LF ranch
S- NSA fudge pop

Check the label on the Ranch, any added sugar? Looks good to me! Make sure you load that salad up with leafy greens!

Thanks! Have you ever made the ranch dressing in the book? I always use Hidden Valley.

I just mix ranch powder with greek yogurt and thin it a little bit with milk.

ETA: I do my own ranch powder too -

Ranch Dressing Mix
5 Tablespoons dried minced onions
7 teaspoon parsley flakes
4 teaspoon salt
1 teaspoon garlic powder
Mix together and store in an air tight container.

Shouldn't you be getting a bit more calcium? Any way to substitute a greek yogurt for one of the pistachio snacks?

Yes, you are not meeting your dairy requirements as stated in the Revised Food List above. Yogurt and skim milk will help with that.

try some beans in the salad too! Eat the pistachios with cottage cheese or yogurt, as suggested too :)

Unless you are lactose intolerant. When I did South Beach I had to skip the dairy because of that very reason.

And I *love* dairy so that sucked.

Yes, we do have to make adjustments. However, the OP did not state she was lactose intolerant - note the 2% milk in her coffee.
