Default New sort of...

Hey everyone,
I love the SBD did it after both my pregnancies and lost all the baby weight in no time.
I'm back here for a different reason though, my six year old daughter was diagnosed with Type 1 Diabetes about four months ago. We also found out that she has Celiac disease. So needless to say our life has been turned upside down. No more easy dinners on the fly, no processed food, no cookies, candy or cakes. We always ate healthy and I always cook from scratch so its not all bad but the quick and easy days of putting food on the table are over. Plus my love for baking has been put on the back burner for now.
I plan on following SBD to set an example for my girl. She cannot snack on any carbs so during the day we will both be snacking on healthy cheese, nuts, veggies and hummus. Not easy for a 6 year old. I mean she is very structured and doesn't give me problems about what she can and cannot eat but it still makes me sad.
Our dinners are usually lean protein, fresh veggies, and some carbs for the kids. Usually a baked potato or rice.
Do you have any ideas for snacks? Just in case she gets sick of the same old stuff? Thanks for your help!

I hope some of the more experienced Beachers can help with ideas; I'm a newbie so I don't know..but I wanted to say what a shock that must have been, and best wishes for dealing with it. Your little girl sounds wonderful that she doesn't give you flak about what she can or can't eat.

Here's a recent snack thread. Also, how about turkey pepperoni, cold or microwaved crisp, and Hormel has Stix now that kids would probably like. My teen will eat hardboiled eggs; we keep some in the fridge. Green bean fries are a favorite snack of mine. Roasted chickpeas.

Your DD sounds like a real princess! My best friend and her twin have both had diabetes since childhood and my sister has Celiac. They actually have the best food habits of anyone I know. I'm sure it's still a bit of a shocker but I would guess that there is quite a bit of published info around.
