Sounds yummy!

Tomorrow I am making the Hobbit Shire Soup, Broccoli and Cheese Soup to Die For! and chili so we have meals during the week. I am sooo excited to be cooking again!

I'm looking forward to dinners this week! We're having...

-That delicious tagine
-Mmckellan's pork chops with creamy sauerkraut
-Roasted chickpea & strawberry spinach salad
-Chicken enchiladas with salsa verde
-Chicken, pear, spinach and RF brie grilled sandwiches
-Stir-fried tempeh with snow peas and cashews
-Buffalo Chicken-blue cheese meatloaf (made with ground turkey, which was on sale)

Shelflife - sounds yummy!

Week looks like this:

Sunday - Taco Bake
Monday - Frozen meal (got home from work crisis too late)
Tuesday - Broccoli-Cauliflower-Chicken and Cheese soup
Wednesday - Chili
Thursday - SOUPA AVGOLEMONO (Greek Lemon and Rice soup!!)
Friday - WW pizza and salad

Saturday we have a wedding. No clue what is on the menu there...
Then food shopping on Sunday!

Sunday - second T-Day dinner
Monday - scrambled tofu, sugar snap peas
Tuesday -Gypsy soup, sauteed broccoli rabe
Wednesday - cabbage, crumbles, peppers, etc
Thursday - crustless tofu quiches, twice baked cauliflower
Friday - veggie burgers, greens, and butternut fries

Remainder of this week:
Tuesday - Dijon Salmon, Caesar Salad, Parmesan Roasted Cauliflower
Wednesday - Chicken Marsala, Caesar Salad, Steamed Broccoli
Thursday - Crab Cakes, Roasted Broccoli, Caesar Salad
Friday - going out to eat. Not sure where

I am also going to make this salad tomorrow, but make it SBD friendly for lunch - I am really excited about this one: Big Steak Salad

My weeks never follow the plan I make
Yesterday I made Very Veggie White Chili. I forgot how much I enjoy this simple recipe. It's serious comfort food on a cold night.

Wed. night I made a spur of the moment minestrone in the crockpot. I usually use dried veggies in stews but they worked great in this soup. It's nice to have something different for the winter.

Tonight it's the broccoli cheese soup made with white beans. I've been craving that for weeks and just waiting for DW to be back to a normal diet Once again our fridge is overflowing with leftovers
