Cottage, love the idea of kale with apples and gorgonzola. I guess I hadn't considered it for sweeter salads.

Scarlett - maybe you aren't getting your calories from the right sources? i've been training for a marathon for a few months now in addition to teaching group classes and I'm not having any energy issues. Do you post your menus here?
