Wow! Now I want to try Chia. Native Americans used to use it during their travels, and I always wanted to try it for that reason. Now I have another one! I saw that one oz of chia has 157 calories (dried chia), but is 1 on "estimated glycemic load". SBD usually takes glycemic index into consideration right? They have a little less calories than almonds and a little less protein, though they have about four times as much fiber. That sounds like a good option for those who have trouble with their "regularity" on SB. No wonder they are so filling.
Edit: I love pudding, and even made a crude "cream of wheat" out of psyllium husks (for desire of my childhood comfort food, not for creative ways to take metamucil). I also cherish native american foods, like tapioca. It sounds like chia is perfect for this! Thanks for sharing the pudding recipe! I am really looking forward to trying it.
